Green smoothies make the best snacks!
Too bad I don’t have a blender in the office to make them fresh when I’m at work ;)
Today’s mix was:
- 3/4 cup milk
- 1/3 cup frozen cherries
- 1 Tbsp almond butter
- 3-4 cups spinach
And thank goodness Melissa made us these mugs for Christmas! It’s the only glass I have at home that will hold the smoothie.
I made this smoothie at 3:30 and it held me over just long enough – my hunger started to kick in right when Nick got home.
The main part of dinner was easy tonight: buffalo chili mac leftovers. But I couldn’t decided whether to have broccoli or a salad with it.
Then I saw the tiny chunk of my sourdough on the counter and knew what to make.
I had about a 1.5” chunk left of one of the loaves from this weekend, so I diced it up and tossed it with a little olive oil, salt, and garlic, and baked them at 350 for about 10 minutes.
Homemade croutons are so good!
I had a HUGE salad with romaine, carrots, red onion, croutons, and a quick dressing of raspberry balsamic/olive oil/dijon.
I think I’m doing pretty well on the “eat more veggies than fruit” goal so far ;)
Nick just came back in with Maggie, so we’re going to try to tire her out before The Office comes on. It’s an hour long tonight and is the baby episode – get excited! :)
