I tried one of my new grocery store finds for lunch today –
Nick loves the Kashi meals, but they’re normally 4.99 each (and that’s the cheapest I can find them!), so I only buy them when they’re on sale and/or I have a coupon.
Luckily, both happened this weekend! Kroger had a Buy 1 Get 1 Free sale on the frozen Kashi meals, and I had 2 coupons to use for $1 each.
I ended up with 4 meals: 2 for Nick, 2 for me. And I only paid $7 for all 4 with the sale + coupons :)
I picked this one out to try, and am so glad I did.
I’m not a big fan of frozen meals with chicken (it always has such a strange texture), but I was happy to try this veggie lasagna. The stats are great, and the ingredient list on the Kashi meals is pretty impressive, too.
They also have new boxes that are made of 100% recycled paperboard!
For not being a homemade pasta bake, it was delicious!
It also looked MUCH bigger once I moved it to a plate.
I loved that the veggies weren’t so cooked that they had no texture left. And the tomato basil sauce was so light and flavorful – it made me really excited for summer. I can’t wait for fresh tomatoes!
I paired it with some green beans for a quick and easy lunch.
And, after I’m done eating, I’m off for the second part of my working-from-home lunch routine:
Taking Maggie for a walk.
She loves it, and it gets me out of the house for a little while – it’s good for both of us!
