Buffalo Joes

Do you ever have those days where the hamper seems to be filling itself back up after you take clothes out? I feel like I’m not making much progress even though I have 2 loads done already.

And I’m sure I could have done more laundry, but Nick, Maggie and I took a walk down to the river this afternoon.

It was 61 degrees! I’m not sure where this weather came from today, but it was beautiful – blue skies, slight breeze, sunshine. Nick played outside with Maggie while I got groceries and then we all took a 30 minute walk together around the neighborhood. I didn’t even need a jacket…so now it has me in the mood for spring. Too bad we may be having one more big, bad storm next week :\

My dinner plans tonight were actually my original plan for our superbowl night meal, but since that meal plan got moved, I decided we needed the sloppy joes tonight.

I wanted to make the same recipe I used last time, but I didn’t have all the ingredients, so I ended up just throwing things in the pan until it tasted right.

  For tonight’s Buffalo Joes, I used:

  • 1 lb. ground buffalo
  • 1 can diced tomato
  • 1/4 cup ketchup
  • 1 tsp tomato paste
  • 1 Tbsp mustard
  • 1/4 cup Country Bob’s barbeque sauce
  • garlic
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • salt
  • pepper

They were great! I love using buffalo instead of just ground beef, and it was great in these sloppy joes.

We had the sloppy joes on some whole wheat buns, along with a big serving of veggies: green beans with corn, carrots, and peas, and some roasted potatoes.

And we split a Pepsi :)

My head + body still feel like they’re catching up after the trip, and my time for sleeping and waking up still feels a little off. I’m hoping to get a good night’s rest tonight before work tomorrow.

The only plans for tonight?

More laundry, the Hokie basketball game/Olympic hockey game, and cuddling.

  7. Yum, those sloppy Joe’s sound great! I think the best recipes are born from just using what you have and tasting as you go!
