Last Minute Packing

Well, I think we’re ready!

Of course, we won’t know for sure until we get there and figure out if we actually forgot anything.

This afternoon was busy at work – I have some stuff that has to get done before I leave, so today and tomorrow will be filled with those tasks and my daily stuff. I’m just glad I didn’t get very many phone calls – I had too much other stuff to do!

I snacked on a clementine + Amazing Grass bar around 4 this afternoon.

I guess all that work made me hungry! I was ready for dinner before we even got home today.

It snowed off and on today, but it was really bad when were on our way home tonight. The snow was sticking to the roads pretty badly already, and it was coming down fast!

As soon as we got home, Nick dropped me off and he headed up to the store to get the right size ziploc bags and I got dinner ready, took Maggie out, and fed her and Roxy.

I know I say this all the time, but our leftovers were so nice to have tonight and they saved the day! Definitely saved us time, and we needed that.

I had a HUGE salad with romaine, spinach, carrots, red onion and some Newman’s Own Caesar Dressing. I didn’t want to leave any lettuce in the fridge, so I just ate as much as I could tonight ;)

We had the rest of the frittata from last night, along with some of the honey whole wheat bread I made last weekend.

The frittata turned out great – it was filled with potatoes, cremini mushrooms, roasted red peppers, chicken sausage, eggs, and a little colby jack cheese.

We got the rest of our bags packed (except for things like my contact case, glasses, makeup, and toothbrush which will be packed in the morning) and got all the pet stuff together.

Someone asked about us canceling Roxy’s reservation at the kennel place – she’s actually going to be staying with Nick’s parents along with Maggie! We’re happy about that, and so thankful that they’re taking her in for the week. She’s not the easiest pet to deal with, but they know her and she’s used to them, so it should be good.

The only thing left? To put everything in the car before we head out tomorrow.

The new episode of LOST is about to be on, and I’ve got to get some popcorn made ;)
