Soup, Salad, Swiss

Only one more day until the weekend!

I’m just hoping this storm that’s on its way brings snow and not ice :\ I’d like to be able to go outside and play, and with ice…that’s not really an option. I guess we’ll see in the morning!

I love my lunch today.

Yup. More of my sourdough bread. I may have it with every meal today.

This time, spread with about a tablespoon of Sabra, 1 slice of swiss cheese and toasted.

I had my hummus + swiss toast with some Campbell’s Blended Veggie Soup (it’s great for a boxed soup!) and a HUGE salad.

This is what I love about working from home the most – being able to make WHAT I want, when I want. And not having to drag all this stuff to the office ;) Plus, we don’t have a kitchen at work, so I can’t toast anything anyways.

My salad was a great mix today:

  • spinach / romaine base
  • broccoli
  • red onion
  • carrot
  • sliced almonds
  • craisins
  • dressing made with whole grain mustard (I’m out of dijon!), balsamic, and olive oil

I’m trying to hurry and eat so I can take Maggie out for a walk –

  1. Hey sweetie! Man those eats are right up my alley. Im loving the huge bowl of veggies. I swear I could eat that everyday. And I love all the amazing breads that you have. That sourdough breads sounds awesome!

    I actually am not a huge fan of bottled dressing. I like to make my own. My favorite one right now is one I got from Averie actually. Its canola oil mayo, with apple cider Vin. and some stevia. So good. It tastes like a cole slaw dressing and I love just dumping it on my salads.

  2. hummus and melty cheese is an amazing combo! you’re definitely lucky to have the convenience of working from home. i love being able to buy food at the dining hall and eat in my dorm etc… next year working in an office 8-6 is going to be a huge shock to me :/

  5. I used to be able to make lunch at home three days of the week, but now my hours have changed so I have to be at work at 11 every weekday! Which means lots of canned soup and PB&J for me ;-;

  6. That’s why I love that my office is right downstairs from my apartment. So I can just dream up what I want and go eat it for lunch. None of the I don’t want what I packed blues.
