Lost in Butternut

Okay, LOST was nuts last night.

I’ve been watching this show for over 4 years, and I have to say – I was a little confused. But I always feel like that after watching the first episode because it’s been months since the last season ended. Still love it :)

And since the show was 2 hours, so we ended up not watching White Collar – I’m pretty sure we’ll be doing that Saturday morning, especially with the extra snow + ice we’re supposed to get Friday and Saturday.

After the late night, I really didn’t want to get out of bed this morning, but this breakfast made me a little more excited.

Butternut Banana Nut Oatmeal

I had about 1/2 cup of steamed butternut squash cubes leftover and needed to find a way to use them.

I’ve tried sweet potato in oatmeal, so I figured butternut would be just as good – or better!

  • 1/3 cup oats, 2/3 cup water, pinch salt
  • 1/2 banana, sliced
  • 1/2 cup cubed + steamed butternut squash
  • cinnamon
  • 1.5 tsp brown sugar
  • 2 Tbsp pecans

This tasted like a healthier sweet potato casserole with the brown sugar and pecans, and I love how the ripe banana and steamed butternut just melted into the cooked oatmeal.

And I should use brown sugar on my oatmeal more often. I like it sprinkled on top (rather than stirred in) because it melts on the oatmeal and turns into this caramel colored sugar syrup.

Yum.

It may not be a traditional bowl of oatmeal, but it sure was tasty.

 

What foods do you like that other people think are weird?

Nick thinks most of my oatmeal creations are pretty strange, but I still like them :)

  6. My husband doesn’t like brussels or kale. I made kale chips one time and he said he thought he felt like he was eating seaweed.

  7. Thanks for not giving away too much info on LOST, I had recorded it because I was to tired.
    But then again, even if you had told me anything about it, I probably wouldn’t understand it anyway….
    I love that show!

  8. I cannot even comment on Lost, I never got into it, and I don’t think I want to this far into it ;)

    My mom thinks oatmeal is weird and gross, and my parents were definitely confused when I ate roasted acorn squash one night.

  16. Hunni thinks that most of my yogurt messes are weird and my oatmeal is strange. But he eats most stuff I cook out of curiosity.

  17. Oh my. Oh my. I must try that, it looks soooo good!!!! Brown sugar sprinkled over the top is the best. I like to sprinkle raw cane sugar/cinnamon mixed together over my oats… yum!!!

    And i’d have to agree with another commenter.. the green monsters, everyone thinks i’m super weird for that one :)
