Italian Marriage

We got more snow today! We had about 2 more inches at our house when we got home, and then we had rain and a little sleet on top of that!

I was hoping it would get bad enough that work would close this afternoon, but no such luck :(  I’m just happy the roads weren’t icy on the way home today.

Work was pretty uneventful today – especially this afternoon since I was basically the only one in the office. Almost everyone left early because of the weather, so I was actually able to get some stuff done and enjoy the quiet.

But I was so ready to come home, and ready for this dinner.

I finally made a dish that’s been intriguing me for a few weeks: A Lasagna with Ravioli.

Lasagna, with Ravioli?

I’d never tried it, but it definitely didn’t sound like a bad idea!

I’ve seen a few recipes for this (one is a Rachael Ray recipe), but I kind of just made it up as I went along tonight.

I picked up some frozen cheese ravioli this weekend, so while that was cooking, I mixed up a simple red sauce:

  • 28 oz. crushed tomatoes
  • 14 oz. tomato sauce
  • garlic
  • oregano
  • salt
  • pepper
  • basil

Once the pasta was finished, I layered the following in a baking dish:

  • Layer of sauce
  • Layer of ravioli
  • Layer of spinach
  • 1/2 cup of cheese
  • Sauce
  • Ravioli
  • Spinach
  • Sauce
  • Ravioli
  • 1/2 – 3/4 cups cheese

After layering everything in the dish, I baked it at 400 for about 25 minutes until the cheese was melty and browned :)

I definitely wouldn’t compare it to a normal lasagna, but it was pretty good. And I like the idea of baking ravioli in a sauce like this because you can add tons of veggies and have it all in one dish.

Time for me to get in pajamas and get ready for LOST. We are SO excited that  it’s starting again tonight – we’ve been watching since the very first episode, and I can’t believe this is the last season!!!

I’m thinking there will be some popcorn during LOST and White Collar tonight ;)

    I love penne a la vodka. When I was younger I used to think I was so cool ’cause it had “vodka” in it. Oh, I was so mature.

  2. My favorite pasta type is broad rice noodles (like in Thai Drunked Noodles). They are actually one of my favorite foods on earth, sooooo chewy and wonderful.

  3. Boo for more snow. I think its snowing here now too. Yuck!

    Love the ravioli lasagna.

    I really don’t like pasta all that much unless its stuffed with something yummy. Like Squash Ravioli or tofu stuffed shells. Now that is a real pasta! :)

  4. Oh yum, i’ve had something very similar. I love ravioli.

    That’s a HARD question because I love love pasta. Fettuchini (i know that i didn’t spell that correctly) Alfredo is the best. But my favorite is traditional spaghetti with marinara sauce.. something about it that makes me happy :)

  5. I am complete Lasagna fanatic… I think that I could eat it EVERY night and never get bored!! I think that I need to start trying out different pasta dishes and see if I like them!! :)

    pasta always feels so heavy in my tummy but since i like the idea of pasta, i use spaghetti squash with a homemade marinara sauce and it’s yummmy,

    I got behind on Lost in the last few years. I am going to have to watch it all on DVD one of these days.

  10. I saw that Rachel Ray recipe and cried silent tears that there is no such thing as frozen GF ravioli. Guess I need that pasta maker attachment for my KitchenAid ASAP!

  12. Your dinner looks great! I really love all pasta, but right now I’d say spaghetti (because I haven’t had in a while).
