Pie in Oatmeal Form

I knew this would happen at some point.

Today just seemed like the perfect morning to try it. I didn’t want to get out of bed, the alarm jarring me awake before I was ready. I tried to just pull the covers over my head and convince myself that today wasn’t Monday. I’m not ready for a day of work yet – I’d like just one more snow day, please. All the other schools in the area are closed, but my work is open, as usual.

With all the excuses I was giving myself, I decided I had some good reasons to have such decadent oatmeal.

As I was reading A Homemade Life last night, I couldn’t keep myself from thinking about the Hoosier Pie recipe.

Pecans, chocolate, and bourbon? If I had had any energy last night, I probably would have made the pie, but, at it was, I was already on the couch in my pajamas with Nick and Maggie… so that wasn’t happening.

Lucky for me, I had all the important ingredients so I made myself some Hoosier Oatmeal this morning.

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 banana, sliced
  • cinnamon
  • 1 tsp bourbon
  • 2 Tbsp pecans (quickly toasted in the microwave for 1 minute, for more flavor!)
  • 1 Tbsp dark chocolate chips

I’d say it’s going to be a good day when it starts out like this.

The tiny amount of bourbon added more smell than anything – you couldn’t actually taste it, but it did add a bit more depth to the oatmeal.

After tasting these ingredients together in my oatmeal, I’m definitely going to have make the actual pie soon. Who says pecan pies are only for Thanksgiving?

 

What was the best part of your weekend?

Mine was definitely playing outside in the snow with Nick and Maggie.

  3. ummmmm YES PLEASE! i LOVE the addition of bourbon, and i love that you toasted the nuts in the microwave! i would have never had thought to do that. happy monday to you dear – only 4 more days until the weekend :)

  5. hahhhh!! genious to use the bourbon in oats! my dad once suggested rum…make my oats like a rum ball w/ walnuts and chocolate. nom.
