How I Met Your Mother is on! I better hurry :)
Nick and I are both feeling a bit better tonight, and I’m happy for that. My headache is pretty much gone and my throat is feeling better – I think Nick is feeling better, too.
This afternoon was filled with short walks for Maggie, naps for us, and getting dinner ready before our chiropractor appointment.
Introducing, Bison Baked Pasta!
This was not on my meal plan AT ALL for this week. I actually had a butternut squash pasta on the menu, but this was SO much easier!
I took my mom’s regular pasta sauce recipe and added just a few things:
- 1 lb. ground Virginia(!) bison
- 1 can diced tomatoes, 1 can crushed tomatoes
- 1 Tbsp tomato paste
- 1/4 cup red wine
- Italian seasoning
- Crushed red pepper
- Salt, pepper
I made the sauce while some whole wheat penne cooked, then mixed the sauce and pasta together and put it in a baking dish. I topped the pasta with about 1 cup of cheese and baked it at 425 for 20 –25 minutes until the cheese was bubbly and brown.
My mom’s sauce is always better than mine…I don’t know what it is! It’s just always better at their house :)
Maggie just curled up in Nick’s lap, and we’re both about to have a slice of that sourdough cake –
I’m pretty proud of my first-ever sourdough cake :) I think the next one will be even better!
We’re both going to work tomorrow, so we’ve got to get some rest tonight.
