Ice + Cream

Today was so long.

I stopped working at lunch time when my office closed, and the rest of my afternoon included:

  • tissues
  • snuggling with Maggie
  • One Tree Hill season 2
  • napping when I could actually breathe

Nick came home a bit early today because of the weather, and I made the meal I wanted to have last night for dinner.

I saw Rachael Ray make this pasta and wine-poached sausages a few weeks ago, and it immediately went on my meal plan.

I cooked up some whole wheat shell pasta while the turkey sausages were poaching in the wine. While everything was on the stove, I made a quick pesto in my blender with:

  • basil
  • parsley
  • pinenuts
  • olive oil
  • garlic
  • parmesan cheese

Once the pasta was cooked, I added in a spoonful of the pasta water to the pesto and then mixed the pasta with the pesto sauce.

In the same pot I cooked the pasta in, I quickly cooked some kale with a little olive oil, salt, pepper, and garlic, and mixed that in the pasta.

Once the sausages were cooked, I just sliced them up to put on the pasta.

It sounds like SO many steps and things to do, but it wasn’t bad once everything was going.

The pesto is quick and easy, and the sausages + pasta can cook at the same time. Then, the greens in the pasta just take a minute right before serving!

I really liked this meal…and even with my sickly taste buds, I could taste the pesto.

and…yes, our deck is coated in ice and there’s more freezing rain on the way, but I HAD to have ice cream today.

All I kept thinking about was having a blizzard because I knew the cold ice cream would feel great on my itchy/scratchy throat.

And I was right :)

Nick and I just got back from picking up ice cream – a Hawaiian blizzard for him and mint oreo for me.

I still can’t breathe very well, my nose is stopped up, and my head still feels a little like a big balloon, but at least my throat feels better. Even if just for a minute.

 

I think there’s a new Office on tonight? I’m hoping I can stay awake for it.

  1. What do you think of One Tree Hill season two? It really starts to change in season two from a show about brothers to a crazy show about catfights and stalkers and psychos and craziness. It was a tough adjustment for me, but now I’m so used to it I actually miss the crazy when they go back to straightforward stories! LOL.

  2. Awww you poor thing, I am so sorry you are stuffy and not feeling well. But, I must admit, spending the afternoon in your pj’s watching one tree hill with Maggie does sound enticing! :)

  3. Awww, I’m sorry you’re not feeling well. Head colds are the worst!

    I love that you got ice cream! My mom used to always tell me ice cream would make me sicker. Whatevs. :)

  12. I am so sorry to hear that you arent feeling to well, but I am sure that you will quickly start feeling better as long as you relax and let your body heal!! I also think that it is great that you treated yourself to a Blizzard, because as the saying goes…. “Starve a flue and feed a cold”!! Hope you have a great night!! :)

  19. I totally crave ice cream in the cold. I remember growing up, having snow days, and my dad going out to get ice cream for us.
