Super Strata!

Humpday is over! Aren’t you happy? I’m ready for a weekend again :)

I was pretty much hungry all afternoon today. I didn’t have any snacks that I actually wanted, so I just guzzled water until we went home.

And we came home to a mess!

Maggie was not happy that we were not home with her today – she had flung litter all over the place and thrown her blanket + bed across the kennel. Of course, she was happy once we were home.

I cleaned up her pee while Nick took her outside and then Nick cleaned up the litter while I washed dishes and got started on dinner. At least we have a good system between the two of us!

Tonight’s dinner was something I had been thinking about all day.

While I was on the way home from my appointment yesterday, I stopped by one of our local health food stores, Annie Kay’s, to see what they had from the local bakeries.

The great thing about Tuesdays? Whatever baked goods they have leftover that day are free! They do that so they can get rid of what they got earlier in the week before the new shipment comes in. And it’s all local!

I grabbed a loaf of rosemary sourdough to try out – I really just wanted to see if their was as sour as mine :)

I decided to use the bread to make a strata for dinner.

Honestly, I decided I needed to figure out how to make a good strata after seeing them on Erin’s blog all the time – they always look so good!

So good, and so easy.

Tonight’s mix included:

  • rosemary sourdough
  • 1/2 green pepper
  • 1/2 red onion
  • 2 scallions
  • 1/2 cup roasted red peppers
  • 1 pkg. cremini mushrooms
  • 1 chicken sausage
  • 1 can diced tomatoes
  • 6 eggs
  • 1/4 cup or so milk
  • 1/2 cup cheese
  • salt, pepper

We had some leftover green beans on the side for a bit more green. And this sourdough was not as sour as mine, but the rosemary flavor was amazing – this smelled incredible when it came out of the oven.

Maggie has been crazy tonight, and messy. I washed her bed and blanket again tonight, and I just heard the dryer buzzer go off. Time to get them and get her ready for bed!

Super fun giveaway tomorrow! and a celebration :)

  10. Isn’t it crazy how much work a puppy/dog can be? I can’t even imagine what having kids will be like. At least the puppy will always be a cutie.

  11. Ahh it’s crazy to see local products on your blog because I buy them too! Annie Kays is one of my favorite local stores :) I like EATS naturals too

  12. The Sourdough Strata sounds amazing and I am really sorry to hear about your Maggie problems. I have a question, do you leave maggie out of her cage all day or do you keep her in her kennel??

    • We keep her in her kennel during the day because we just can’t leave her alone in the house for that long yet. But her kennel is pretty big – she has room to walk around, play with her toys, and lay down – plus she has water and some food in there with her, too.

  13. Your dinner looks delishes… the grocery store that I shop at also has a rosemary bread that they bake fresh and it always smells heavenly

  14. I can’t believe that bread was FREE. Delish. Looking forward to see what the giveaway is!
