Eggcelente

Thankfully, Maggie slept through most of the morning so I was able to get a lot of work done.

The afternoon may be more of a challenge since that’s when she wants to play. Hopefully, a few bathroom breaks outside will be enough to keep her busy!

My choices for lunch consisted of a few random bits of leftovers or boxed soup.

I chose the leftovers, mostly because I would have to throw them away if I didn’t use them.

It turned out great!

Kind of like huevos rancheros, but with rice instead of tortillas. Eggs + rice = one of my new favorite combos.

I heated up about 1/2 cup of brown rice and 1/4 cup or so of refried beans, topped those with some salsa and 2 over easy eggs that were cooked with salt, pepper, and way too much ancho chile powder! I was shaking it on, and this big pile of it jumped out of the jar. At least it’s spicy!

I also heated up some broccoli + green beans to have along side for more veggies and another color.

I’ve got to take a puppy out for a bathroom break and then it’s back to work for me.

  3. I don’t really have a Mexican meal that I like but I do love salsa and guacamole — I add it salads and wraps all the time.

  4. The eggs in this post reminded me to make your “huevos rancheros” with the corn tortillas soon!!! gotta take advantage of my kitchen while i can !

    And I love how having a puppy is like having a BABY!!! At least Mags won’t talk back when she hits her teens ;)

  7. Oh gosh, I could eat just about any mexican meal–it’s my absolute favorite cuisine. I’ve got a good black bean casserole on the menu this week, but I also really like sweet potato/black bean enchiladas. And you can’t beat a good tamale.

    I can’t believe that college football is almost over for the year–seems like it was just starting not too long ago. I’m going to pick TCU tonight though. Good game!

  13. I love love love Mexican food! Unfortunately, I like the not good for you stuff like queso dip, enchiladas, etc.

  18. I like huevos rancheros that I make at home the best. But I really really love stuffed poblano peppers/chile relanos.

  19. i really enjoy rice and eggs though i usually have them with asian seasonings – have never thought of adding salsa!

  20. Before I was a vegetarian (and health concerned) I would get Taco Bell Chicken quesadillas every Sunday morning in college (good hangover cure). But now I love making a “Mexican fiesta salad”: spinach, black beans, onions, mushrooms, tomatoes, and salsa as salad dressing :) Yummy!!

    I don’t know if you ever ate at El Guadalope’s (on main near Kroger) before it closed but I loved the El Guadalope special with enchiladas, rice, beans, and tacos-I would always eat too much!!

    I think I’m going to try and read Proverbs this month with you guys! One of my new year’s goals is to be consistent with my Bible study.

    Nachos are by far my favorite choice when it comes to mexican food. But, I usually go to healthy route and order a burrito bowl.
