Three Course Lunch

Even though she can be completely frustrating one minute, she certainly makes up for it the next.

We’ve walked, played a little, eaten, and napped.

She is good for helping me rest and trying to get rid of this headache.

I needed to eat the rest of my soup from yesterday, so I heated that up while I put together a big salad.

We’re going to Nick’s parents house again this weekend so we can do Christmas with his sister and her husband, so I’m trying to make sure we eat stuff from the fridge this week. This salad helped me use up the last of the lettuce from last night.

  • romaine
  • carrot
  • scallions
  • radish
  • craisins
  • pecans
  • dressing of olive oil, balsamic + dijon

The soup was just as good reheated today. I do like homemade soups better than canned/boxed, but this one was actually pretty good. Not too thin and it had a lot of flavor.

And instead of a chocolate plate (I’m saving that for dessert :) ), I had an Oikos with some apricot conserve + almonds.

Right now, I’m cuddling a sleepy puppy and going to take a break from looking at this screen – my head seems to get worse when I’m looking at the computer :\

 

Do you like radishes? What do you do with them?

  1. I haven’t had radishes since I was a kid. I didn’t like them back then but maybe I should give them another try (tastes change drastically)!

  2. Isn’t having a puppy fun!! These past few days home sick would have been so lonely without Lucy Dog – I love having her around :)

    As for radishes, I think I forget that I like these bc I never seem to buy/eat them but whenever I randomly do I am always pleased! Also, I can’t remember if you have read Molly Wizenberg’s A Homemade Life (?) however she has a great simple radish serving idea that this just reminded me of! Mmmm :)

    I love radishes. I enjoy them all by themselves but also in salads.

    I love radishes quartered and dipped in dressing like baby carrots.

  9. I do like radishes but I understand why a lot of people don’t. I think you either love them or hate them, but I find that if you slice them very thin, they are more enjoyable then eating them whole.

    I’ve never tried radishes! But your salad ingredients sound really good, inspires me to get more creative with my salads.

  13. You are absolutely KILLING me with this puppy cuteness! what a sweet little bean! (and yes – I remember when we first got Lando – I was SO excited when we brought her home, and about a week later – I thought to myself “Holy COW, what did I get myself in to”) – I’m pretty sure that was after a week straight of sleepless nights because every two minutes she was crying! I promise – being a puppy parent gets easier!
