Links + Leftovers

Lunch today was slim pickins.

I had 2 choices in the fridge, both leftovers, but one needed to be eaten or thrown away TODAY so I did my best not to waste it.

We still have some of the ribollita, and I knew I should eat what I could today.

It turned out the be the perfect quick lunch!

I decided to have some crackers with my soup instead of bread – those Kashi Asiago crackers are really good.

I heated up some of the soup along with a little broccoli that we had leftover from the other night and combined the two. The more veggies in this soup, the better!

And some Kashis for crunch.

 

I’ve got to run up to the grocery store to get a few things I need for dinner.

I’m excited about dinner! I’m using a new dish tonight for the first time, and I can’t wait!

  2. Don’t you just love when leftovers turn out to surprise you? I am not a big fan of them… I get bored with food if I eat it more than twice but every once in awhile, I will switch it up a bit and it turns out great!

  4. Yum!! soup makes for an awesome left over I think. The flavors are allowed time to marry a bit more and usually the taste is just so much more intense. Awesome!!! Plus soup is the perfect winter food. Glad it turned out well for ya!! have a wonderful day=)
