Best Kind of Breakfast

Although I like any good breakfast, the best are the ones I’ve planned out the night before.

There’s just something about creating a recipe in my head and then having to wait to make it – it makes me happy to get up in the morning and get going so I can sit down to breakfast.

And, today, I actually got up on time! Go me. Let’s see if we can keep this ball rolling for the rest of the week.

The last time I made oats-in-a-jar, I thought that would be end of the jar, but I couldn’t finish it!

I ended up leaving about 1 Tbsp of almond butter in this jar and knew it was time to finish her off.

My bananas weren’t really ripe yet, so I used an apple for the fruit in my breakfast today. I really love the apple bites in oatmeal – I’ve never been a fan of just apple flavor in oatmeal (like the instant packets), but having semi-soft apple pieces mixed in gives the oatmeal such a great texture!

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1 small apple, chopped and cooked in the microwave with cinnamon for 1:30
  • 1 Tbsp butterscotch chips, most mixed in – a few on top
  • 1 tsp or so pumpkin butter
  • about 1 tbsp almond butter at bottom of jar

The almond butter, pumpkin butter, and butterscotch chips don’t hurt either ;)

Do you dream up food combinations and get super excited to finally try them? Or am I the only one?

  3. Ooo I’d love to be a breakfast guest at your place! I usually just eat the same thing (cereal w/blueberries n cinn, egg white omelet with mushrooms, pepper, and spinach) because I’m not too ambitious when I first wake up :-)

  4. I always dream up combos. It’s a bummer if they don’t work out, but I always feel really proud when they do!

  5. I acutally dream about my saturday (and sunday) breakfast ALL WEEK!! :D
    Since I eat breakfast at work during the week I’m not able to make oatmeal… So I fantasize about what will be in my next oatmeal all week and am thus really excited for it when it arrives and jump out of my bed as soon as I’m awake!! :D
    PS: I think it is safe to say… You can expect a little surprise soon!! ;)

  6. I only make oatmeal on the weekend so I get really excited about all the fun combos I can try….usually involving pumpkin and chocolate :-)

  7. Mmm, your oats in a jar looks delish! I really need to finish a nut butter jar so I can do that again. And I totally dream up food combos and get excited about them, too. You’re not the only one!

  10. I definitely do…usually during the afternoon when I’m willing the work day to be over!! And I NEED to get those butterscotch chips!

  12. I’m not a huge fan of the apple flavor either but I could definitely see myself liking the apple bits in the oats. I’ll have to try it! :)

  14. I definately dream about the food that I am going to make. Most of the times at the gym, which I find ODD.

    While visiting my folks over Thanksgiving I noticed my mom is using TJ almond butter, we don’t have TJs in TX, she said she pays $4.99 for the AB compared to my $9.99 at Krogers… Crazy.

Uhhh yah Brandimuffin I’d HAVE to plan this in advance b/c I don’t have butterscotch chips laying around my kitchen!!!!! :P I spend too much time during the day thinking about food, I think my brain gets tired of it at night. So I dream about forgetting to do my French homework/reading/studying for big exam! Go me!!

    I may just have to make these oats in a jar tomorrow, I’m *almost* out of AB!!!!! :( Good thing I’m going to Raleigh this weekend so I can stock up!! :D

  17. I’m just like you! I love dreaming up new recipes in my head and then trying them out! Some are great, and some are better left in my head, haha.

  19. You are not alone. I love to look at stuff and think of what would good good. That’s how I came up with my favorite salad dressing of avocado, hummus and rice vinegar and how I make my oatmeal :-)
