Upside Down

So far, everything about today is the opposite of yesterday!

  • I got up on time
  • Roxy was not inside this morning
  • It’s not raining!
  • I didn’t have any fun dreams last night :(

Of course, I get up on time on my last day of work this week  ;) At least it happened and I wasn’t rushing this morning – I didn’t pack my lunch last night, so that gave me enough time to find something to take to work.

I also made a bowl of oatmeal that I haven’t had in a while.

Pineapple Upside Down Oats

Any other time I made this, I used canned pineapple and it was good. But fresh pineapple in this was amazing!

  • 1/2 cup oatmeal, 1 cup water, pinch salt
  • 1/2 cup diced pineapple
  • cinnamon!
  • 2 Tbsp walnuts
  • 1 Tbsp unsweetened coconut
  • 1 tsp brown sugar

I normally don’t add any sweeteners to my oatmeal, but the brown sugar in this bowl is so good. When you sprinkle it on top of the hot oatmeal, it melts into this brown sugary syrup (you can see it on the pineapple, too!).

I also bought new cinnamon this weekend.

I normally just buy the store brand of cinnamon, which is between .50 and $1. But I tried this Saigon Cinnamon at a friend’s house a few weekends ago, and it was the best cinnamon I’d ever tasted.

I can’t really explain what the difference is…this one smells like cinnamon, but it also smells a little sweet + hot almost?

This cinnamon is definitely more expensive than the store brand, but it’s so, so good. I think it’s worth it.

  1. I agree 100% with your description of that cinnamon – sweet and hot. Anne from Harpingonfitness gave me that as a gift and it’s the best!

    I splurge on Greek yogurt, Vitas, and carob – a girl’s got to have those three in her life ;)

  5. yay for the last day of work! i know i’m totally looking forward to my school day being done with! There used to be tons of things that i would splurge on when i would go grocery shopping. there are just certain things you just have to have!!!! have a great last day at work!!! :)

    I splurge on organic food because I think it is worth it in the long run.

  7. I’ve never seen that kind of cinnamon! I think I need the jumbo bottle of cinnamon from Costco, I use it so often (oats, ya know). :-)

    Even though greek yogurt is twice as much as regular yogurt at my store ($1.39 per Chobani), I treat myself to a few a week. It’s completely worth it to me!

  9. I splurge on organic fruits and vegetables whenever I can and free-range, organic meats for special occasions…!

    I typically splurge on almond butter. It’s so good, I can’t not spend $6-7 on it.

    I do tend to splurge on things like good cheese and hummus since I love it.

  14. i love the exclamation mark at the end of cinnamon, I feel the same way about it :) LOVE it and throw it on everything and anything! those oats look fantastic I can picture the flavor combo in my mouth!

  18. My next bowl of oatmeal will definitely be some pineapple upside down oats. Yum!
    My splurge is often on my supplements – they cost more than anything! And if a fruit looks yummy in the market, but isn’t on sale, I’d consider that a splurge since I usually only buy sale produce.

  22. i always splurge on honey…i like to buy the kinds that produced by bees getting pollen from certain flowers and stuff, like avocado trees. gives each kinda an authentic taste!

  25. nut butters. For some reason I can totally justify buying a 12 dollar jar of almond butter, but can’t bring myself to spend more than 10 dollars on clothing. Priorities!

    I splurge on too many food items! Interesting vegetables, fancy cheeses, good meat, etc.

  27. I was just thinking of making Pineapple Oats because I have all of the ingreidents right now. You’ve just convinced me. Your bowl looks sooo good!

    That Cinnamon sounds awesome. Keeping my eye out for it. I think some things are worth the extra change, like agave nectar, good granola, and organic condiments.

  29. I have to splurge on salsa.. i LOVE my salsa.. and i can tell if its not a great brand.. i like it thick and chunky, and super hot. (twss)
    i also splurge on my PB puffins.. six bucks a box.?? ouch. but worth every cent!

    i must try that cinnamon! i will be on the lookout for it today :D yayy
