Good morning and happy Saturday!
I woke up today at 6 am, but wasn’t ready to get out of bed yet, so I fell back asleep until 6:45. Why is it so easy to wake up without an alarm clock and get up on the weekends, but I can’t make myself get out of bed to go to work?
Our farmer’s market switched to its “winter hours” so I didn’t get up and leave right away this morning – that means we had time for breakfast!
And Nick was the Chef this morning. ;)
Maybe I should have him make breakfast more often – he’s definitely better at breakfast than I am. Biscuits, gravy, bacon, omelets…all the good stuff.
I’m pretty sure my omelets have never looked this perfect.
The filling was a mixture of canned crushed tomatoes, a splash of Black Box wine, smoked paprika, onion, garlic, salt, and pepper.
He filled the omelets with the tomato mixture, some scallions, and a bit of colby jack cheese.
The flavor of the wine gives the tomatoes such depth – they didn’t taste like canned tomatoes. And we love smoked paprika in anything, so the little hint of smoky sweetness was perfect with the sweet tomatoes and bite of the scallions.
Nick also made us some of our Trader Joe’s Kona coffee this morning. I had a cup with my breakfast, and am taking some on the road with me.
I’ve been waiting for some books to arrive that we ordered on Amazon, and they showed up yesterday! I already started this last night and am in love already. She has such a beautiful writing voice.
