POM-solutely Delicious

How was your Saturday? I know it’s only 7 pm, but Nick and I are settled in, we just finished eating dinner, and the only thing left on the agenda is some laundry-folding and football-watching – my kind of Saturday night  :D

I had a few comments asking about the growler.

Well…

is a growler. AKA, huge jug of beer.

Bull & Bones, this local brewhaus + restaurant, has these growlers for sale. The first time you buy one, it’s $20 and you get to pick what beer you want. They always have 6 regulars plus one seasonal brew on their menu.

But, once you’ve bought the bottle, you can wash it out, take it back, and then it only costs $9 to refill it!

Genius. Today, I got it filled with their Lunch Pale Ale, which is Nick’s favorite.

This afternoon, I got some laundry done, cleaned the bathroom, and dusted – the only thing left to do is vacuum, which will probably happen tomorrow.

And dinner turned out great!

I’m not giving out the meatloaf recipe yet, though, because I’m turning it in for the POM Recipe Contest!

Besides the meatloaf and broccoli, I also made my version of those Autumn Tarts that I had at the Taste Pavilion during the Foodbuzz Festival.

They had a card with the recipe, so I kind of followed that.

I cooked some diced red onion in a bit of oil and added 1 cup of a wild/brown rice mix. Stir in 2 cups of broth, bring to a boil and then simmer for 30 minutes or until the broth is absorbed and rice is cooked.

While that was cooking, I cut up a mini butternut squash into cubes and steamed it in the microwave for 4 minutes. Then I just stirred in the squash and a few dollops of the Blue Cheese Dijon Mustard from Made in Napa Valley and topped it with some pomegranate arils.

yum!

This was a great fall meal, and my belly is happy.

I hear the laundry calling…I better answer before I get settled on the couch.

    It rained here all day. Hope your good weather held out. Now I’m really wishing I had sushi but discovering a new appreciation for Dahl

  10. Ooo POM meatloaf makes meatloaf actually sound good, although I always go the ground turkey route vs beef!
