Football Fanatic

I know today is only Wednesday, but I totally feel like it’s Thursday!

Why?

Because football is on  :)  Muahahahah….I’m going to watch so much football this week, I may break some sort of record.

There was a game last night (that I didn’t watch).

There’s a game tonight.

Tomorrow night.

Friday night.

And ALL day Saturday.

and this game is about to start, so I better hurry!

I ended up not having a snack with me today at work and I was starving!!!

I couldn’t believe I forgot to pack a snack…I made it home and was able to make dinner without snacking and ruining my appetite, thank goodness.

I thawed some chicken in the fridge overnight, then seasoned it with:

  • salt
  • pepper
  • garlic powder
  • thyme

I cooked the in a pan with a little grapeseed oil until it was cooked through.

For the grain side dish, I wanted to try make something a little fall-flavored.

I cooked some bulgur, and added:

  • diced apple
  • 2 small boxes of raisins
  • 2 Tbsp almonds, sliced and quick toasted in the microwave
  • parsley
  • thyme
  • rosemary
  • salt
  • pepper
  • drizzle of olive oil
  • few tsps apple cider vinegar

I loved the crunch of the almonds and the crispy apple bites in this! Definitely a keeper.

For our “green”, I just roasted some broccoli while the chicken was cooking on the stove top.

I was still kind of hungry after dinner, so I also just got a bowl of that Ben & Jerry’s Gingersnap Ice Cream.

I know it’s only in the 40s here right now and is gloomy, dark, and rainy, but I just couldn’t resist this  :)

 

Off to watch football – nite!

    How do you cook the bulgar?

    • I just took 1 cup of bulgur and put in a heat proof bowl.

      Boil 1.5 cups of water, then pour over the bulgur.

      cover the bowl with plastic wrap (or be lazy like me last night and just lay a napkin over the bowl to keep the steam in) and let sit 15-30 minutes or until the water is absorbed. Easy!

  16. I just printed this post so I can make this recipe. I never have any good bulgur recipes but I love the fiber in it.
