I’m so glad you liked the french toast! I did, too ;) 

That breakfast held me over all morning! I like making french toast with a hearty bread like that – and the pumpkin filling helped a little, too.

This morning is going well – busy with work, but it is so gross and gray outside today! Chilly, rainy…now I’m really happy we did go running yesterday because I don’t want to go today.

I forgot that I had bought some brussel sprouts, and Nick isn’t a big fan of them so I figured I could use some of them in my lunch at home today.

This was so easy and so good! Plus, there’s nothing like a warm lunch on a cold, gray day.

I just took a big handful of brussel sprouts, cut them in half, and started just pan roasting them with a little bit of grapeseed oil.

I added in 1/2 cup of a bean mix (kidney, pinto, black), salt, garlic, parsley, crushed red pepper and some couscous. I actually had some leftover couscous which was superfast, but couscous only takes 5 minutes to make anyways.

I just mixed all of that in the pan until it was heated through and spooned into a big bowl.

Isn’t it right that a grain + beans = a complete protein? I think that’s right. So, go me  :)

This one is a caramel apple fudge in milk chocolate. I definitely like the dark better, but this is still good.

A great, small, sweet way to end my lunch.

  3. I wish I had thought to make a warm lunch today — it is so cold here, it would have been nice. I like to stream my sprouts and have with a little evoo and salt. Simple and delicious!

  7. I like my brussel sprouts steamed for 3-5 minutes and topped with cooked quinoa and marinara (sometimes with a Tbs of PB2 mixed in) and a TON of parm!

    I love them halfed, then steamed! or baked with ketchup ( i love my ketchup ) ha.

    A recipe my mom gave me was to quater the brussle sprouts, saute them, then bake with cheese!! I thought that sounded so good!! I need to find some vegan cheese to make that!

    I also have about 5 things for you!
    2 bigger things, 3 smaller. Thursday would be a good day to send it out, for sure :)

  16. my fave/quickest way is to roast them, but i also like to cut them into slices and sautee them with garlic and evoo.

  23. Not a huge fan of sprouts – I roasted them – maybe my spices were wrong?

  24. I like them sauteed in olive oil until they’re brown and falling apart and then sprinkled with some salt and pepper. I also like them with sauteed with shallots and crispy bacon. Yum!

  25. Mmmmm – my fave way is to roast the heck out of them until they’re reeeeally crunchy. The leaves fall off and are like brussell sprouts potato chips…the BEST!

  26. thanks for the brussels idea – I’m always looking for veggie/bean/grain combo ideas – and I looooooooooove brussels – adding that to my grocery list for this week since I have a multitude of grains and beans always on hand in the pantry ;) great to put in grab and go containers for me :)
