Pumpkin Stuffed French Toast

Happy Monday!

It’s almost time for work – better grab my coffee and get to it  :)

Today’s breakfast was an idea I came up with earlier this weekend, and I finally had the time to make it.

I decided my submission to be the Nature’s Pride Bread Ambassador at the Foodbuzz Blogger Festival needed to be:

  • creative
  • fall-themed
  • delicious

I think I got it!

I didn’t want to just do a sandwich, so I kept thinking of what I could do for breakfast and had an idea to make stuffed french toast using pumpkin in the filling.

Man, oh man, was this good.

Pumpkin Stuffed French Toast

  • 2 slices Nature’s Pride bread
  • 1/4 cup pumpkin
  • 1 Tbsp cream cheese
  • cinnamon
  • ground ginger
  • pinch salt
  • 1 tsp brown sugar
  • 1 egg
  • splash milk
  1. Mix pumpkin, cream cheese, 1/2 tsp cinnamon, 1/4 tsp ground ginger, pinch of salt, and brown sugar in bowl.
  2. Beat egg with milk and another sprinkle of cinnamon.
  3. Spread pumpkin mixture between the 2 slices of bread.
  4. Dredge sandwich in egg mixture and cook in pan until egg is set/browned on both sides.

For the topping today, I heated up 1/2 an apple with some cinnamon and then mixed it with 1/2 Tbsp of maple syrup and a couple pecans.

I really wish I had made 2  :)

    yeah, i’m working on my one arm pushups- i used to be able to do one, so i’m working on my form and getting lower and lower (i.e. chest to ground.)

    thus, i’m PUSHING my limits! =D

    so far i can do a plank easy with one arm out (as shown by me taking a picture!)

  26. Mannn looks so good!! French toast is probably my favorite thing to get at brunch.

    The best part of my weekend was seeing my relatives and going out to dinner. Anything that’s different from the dining hall food just tastes like HEAVEN! I ate soo much kung pow shrimp. And I totally spelled that wrong I’m sure.

    Oh, another good part–found out my mom’s coming to visit me at the end of november! Sooo happy!

    Best part of the weekend was taking today off… so I had two days off in a row for the first time in 3 months!! Working two jobs is a little rough. It’s nice to have a little downtime — which I spent with my boyfriend and my family on Cape Cod.
