2. Homemade soup, crusty bread, honey butter.

I made a homemade split pea and ham soup tonight that turned out great! It was super easy, too.

Split Pea and Ham Soup

  • 1 onion, diced
  • 2 carrots, diced
  • 1 garlic clove
  • 5 cups water
  • 1 cup split peas
  • salt
  • pepper
  • 1 hunk of ham from the freezer (could also leave this out and make it vegetarian)
  1. Saute onion, carrot, and garlic in a bit of oil until softened.
  2. Add in water and split peas and bring to a boil.
  3. Put ham in pot, bring back to a boil, then simmer for about an hour until the split peas are softened.
  4. Stir in salt and pepper to taste.
  5. Serve!

It also helped that today was the perfect day for soup: still cold and gray once Nick got home and dinner was ready.

3. Gingersnap Ben & Jerry’s ice cream.

This stuff is ridiculous. It’s probably a good thing Ben & Jerry’s doesn’t come in larger containers  :)

So gingery and cinnamony, with bits of cookie + strings of caramel.

The perfect way to end my Monday – along with the Hokie radio show (on right now) and How I Met Your Mother (5 minutes!)

    Nutella is just too good to be true on anything, seriously. It’s that good.

    Almond butter and dried fruit. Yum! And holy moly, that ice cream looks fabulous. There’s a Ben & Jerry’s a few blocks away, so I might pay them a visit soon…

  14. Most of my favorite combinations involve cheese (Mmm…):

    – fig spread and brie/goat cheese/blue cheese on crostini (I’m not crazy – I pick one cheese, but maybe one day I’ll try all three together!)

    – pizza and ranch (haha, odd, I know)

    – sweet potato and black beans

    -cereal and soymilk
    -anything with parm!!

  18. Oh wow! Everything looked so good! I love split pea soup; I usually use lowfat turkey kielbasa. But ham sounds good, too! I think I’m a fan of any chunky soup. The weather is getting so cold, so fast so this is the perfect time for soup (and crusty buttery bread). BTW, that ice cream looks phenomenal! I just had some cookies and cream and now I’m stuffed. I haven’t seen that Ben & Jerry’s flavor yet at the store, but now I’m afraid to look! Have a good night!

  19. ive been looking for that ice cream and the pumpkin one since i saw you post them! no luck yet. but ice cream should def be illegal! and id be a criminal :)

  22. I’m trying so hard not to eat my Gingersnap ice cream every night. It’s extremely difficult.
