This afternoon was so busy!
I fueled myself through work with some more of that ginger/cranberry trail mix + a few dark chocolate chips.
And 2 of the cookies I made the other day – yum. These are just the regular Tollhouse cookie recipe, but with 1/2 whole wheat flour instead of all regular.
Plus walnuts!
Even with the fun snacks, I was so happy when 5 pm rolled around.
No run today – we ended up going up to the phone place to get my new phone! I’m excited about it, and it’s so much nicer than my old one! It took me long enough – I think I’d had the old phone for like 5 years? It was time.
By the time we got out of there, it had started to rain a bit and we still hadn’t eaten dinner, so I’m just going to have move the running schedule around a bit for the weekend.
I didn’t have much to work with for dinner, so I grabbed what I had and threw together a quick frittata and some sides.
For the frittata, I used:
- 4 small turkey breakfast sausage links (taken out of the casings)
- 1 big scallion
- 1 poblano pepper from the garden
- 4-5 sliced mushrooms
- salt
- pepper
- crushed red pepper
- 7 eggs
- 2 slices of cheddar cheese, torn into pieces
I cooked the sausage in the pan until it was almost done, then added in the scallion, mushrooms, and pepper and let them cook. Seasoned with salt, pepper, and crushed red pepper.
While that was cooking, I whisked together the eggs and cheese and added a bit of salt and pepper.
Pour the eggs into the pan, cover the pan, and let it cook until done!
We just had simple green salads and some sliced orange on the side.
Easy to make, easy to eat :)
T minus 30 minutes until The Office AND football!

Oooo I love frittatas! I made my first one a few weeks back and served with salad too and we loved it :) So versatile too, yummmmm!

I bought a pan to make frittatas in months ago and I haven’t used it yet! You made me want to bake chocolate chip cookies! Yum!!
