Happy end to your Humpday people!

I’m happy to report that my head feels much better than yesterday and earlier this morning. I can still feel a tiny bit of a headache, but it’s so much better than it was. Thank you, thank you for all your well wishes and suggestions  :) I definitely would have tried the spoonful of ice cream suggestion last night, but I had none!

Lunch today was tasty and fast. I had a meeting today and Nick ended up having to come over a bit later for lunch, so we ate pretty quickly before heading out.

I had a serving of the butternut/mushroom risotto and some leftover broccoli and cauliflower.

The risotto was even better today – all the flavors have really soaked into the rice and veggies. I’m glad I still have a serving left ;)

I also had a local apple!

After eating and reading up on football news, I dropped Nick off at work and headed over to my meeting. It was actually much shorter than I thought it would  be, which was nice. I got out of there, went on a secret chocolate mission (you’ll find out about it later – no worries), and went back to work.

I had a 4 mile run on the plan for today (er…Monday that I was doing today) so I tried out one of my new chocolate grass bars.

First thing I noticed: super chocolatey outside layer and I just smelled chocolate. Good way to start, I think.

Verdict? I loved this! Katie, I’m so excited (still!) that I won this contest and was able to try these bars. I’ve only eaten one and I’m already starting to think of how sad I’ll be when they’re gone.

The middle reminds me of a Larabar, but not as sweet. I loved the big chunks of nuts, and the chocolate layer on the outside was great.

In running news, today was awesome! The weather was perfect, I had NO side stitches (rare for me) and I just felt good. We ran about 4 miles – both of our HRM batteries were dead so we went without today. I have no clue what my pace was, and today I didn’t care. It just felt great.

I think October is my favorite running month – it’s not cold enough that I need my hat/running gloves, but it’s not so hot that I’m sweating just standing outside either.

We got home, showered, and started on a quick dinner.

When Nick’s parents came through town yesterday to pick up Harley, they dropped off some super-fresh Carolina shrimp from their trip.

Nick cleaned them and cooked the shrimp while I cooked up some couscous and broccoli.

The shrimp were amazing – so fresh and sweet.

Nick shelled them and just quickly boiled them until they were perfectly pink. After they were cooked, he tossed them in a mixture of:

  • olive oil
  • lemon juice
  • salt
  • crushed red pepper
  • thyme
  • basil
  • parsley

I made some couscous with some broth, garlic, and parsley to serve the shrimp on – and it tasted great together, especially with a little extra of the sauce poured on top!

I love how quick and easy it is to make couscous. You can have a grain with dinner without having to wait 30-45 minutes.

I’m thinking the rest of the night includes some more stretching, pajamas, and some hot tea while waiting for Top Chef.

  1. Yum! You make me want to try those bars now, too.
    If I’m looking for a quick meal, I’m mucho tempted to go to oats, but for lunch or dinner I definitely like something more savory so I try to at least put the time in to make a microwaved veggie burger or microwaved sweet potato and corn with something fast cooked on the grill.

    For a quick meal I love a Dr. Praeger’s with whatever I feel like throwing on top! Easy way to get some veggies

  3. We made couscous for dinner too. We had sundried tomato, basil and balsamic in ours.

    My favorite quick meal it my version of shrimp puttanesca. WW pasta, FF Italian dressing, can of diced tomatoes, black olives and some spices with some frozen shrimp. Quick in about the time it takes to cook the pasta.

  6. I love couscous! My favourite after school snack when I was in high school was couscous in a coffee mug topped with a little butter and ketchup (oh so classy!) My favourite quick meal now is stir-fry with straight-to-wok Udon noodles and either quorn or precooked hardboiled eggs for protein :D

    mmm I love that the outside of the amazing grass bar looks like a chocolate bar. One bite and then it’s green. most people would fear this!

  10. Your dinner looks delish! Also, what did you put in the risotto? I love all those things, but I wouldn’t even know where to start.

    • I used a Winter Squash Risotto recipe from Eating Well.com for the dish! It was good and easy to make.

  13. I know it’s not really cool and creative, but I just love them. Grilled with cheese all melted, or on a fresh bread with crunchy ingredients.
    Good job on that run!

  14. Those shrimp look soooo good!! I just love me some shrimp!! :)
    My favortite quick meal has to be a salad with ww pasta or quinoa in it!! While chopping the ingredients for the salad I just cook the pasta or more likely the quinoa and everything is about done at the same time!! Yummie!! But in the colder month I usually just make a quick “peperonata” – a few peppers and onion (sometimes additional zucchinis) along with some quinoa or rice! Can’t wait!! ;)

  15. Couscous with veggies used to be one of my favorite quick meals. Now, I like to throw of the veggies in my fridge into one giant salad.

  16. Hmmm….my quick, go-to meal right now is a Flat Out Wrap with avocado, Mrs. Dash, and Laughing Cow. All warmed up in the micro! SO good and takes about 2 minutes to make. :-)

    I need to go get more couscous…I’m almost out and I’m hooked!

  17. Looove shrimp! And that risotto! I need to make some of that pronto.

    When I was at home my favorite quick meal was a bunch of frozen veggies and frozen shrimp sauteed. I would just add some salt, pepper, lemon juice, and maybe some cumin or cayenne and that’s it! With hummus on the side for dipping of course. And sometimes the addition of chickpeas too.

  19. I’ve never had a migraine but I hear they’re horrible, glad you’re feeling bettter!

    I’ve been wanting to try those bars but can’t find them around here :(. Good thing the Internet is around, I’ll have to order some.

    Shrimp is definitely quick, especially when it’s already cleaned and I love to eat it! One of my quick dinners…hmm…prob salmon on thr grill or oven and salad.

  20. couscous is da bomb. it was the only thing i knew how to make in college – i’d eat it with spaghetti sauce and a slice of american cheese. ugh. now i feel sick.
