Soup’s On

What a Monday! Working right up until 5 pm (a little over, actually), then out to play with Harley some more.

I had a serving of that ginger TJs trail mix today –

I just wish there was more ginger! I get out my serving and then dig through the bag to make sure I at least have a few pieces  :)

I also added in about a tablespoon of special dark chocolate chips today.

Dark chocolate makes anything better.

Harley was so funny around 4:45 today – he kept stepping up onto my desk and getting in my face to lick me or bite my hair or drop his stuffed hippo on my keyboard – I guess he was ready for me to be done with work!

Nick came home and we went outside to run around with him a little more – then I got started on dinner.

I found this Minestrone with Endive & Pepperoni recipe in my newest Eating Well and had flagged it to make this week.

I made a few changes (as usual)  :)

  • Added a bit more of everything for extra leftovers
  • 3 servings of dry whole wheat pasta shells (1.5 cups total)
  • 1 bag of frozen cauliflower, zucchini, carrots, lima beans
  • 1 bag of frozen corn, onion, red pepper, okra
  • only 1 serving of pepperoni diced (about 15 slices total)
  • rainbow chard (local!)

This soup was good. I know okra is not ever in a normal minestrone soup, but I loved it in this recipe! The italian seasonings with all the veggies, the little bits of pepperoni, and the pasta was a great mix.

I also had some whole grain bread on the side for dipping.

I’ve got laundry going – really…I think the hamper just keeps refilling everyday! It’s nonstop this week!

Plus, How I Met Your Mother is on soon! The best part of my Mondays, for sure.

  4. Yum. I think they sell dark chocolate covered ginger at TJ’s; I bet that’s good. If they don’t sell it there, I know they sell it at my Whole Foods bulk bins

  6. I love when I am working after hours on my laptop and Leo puts his little head on the keyboard for me to pet. Warms my heart. :-)

    Our laundry is overflowing right now. We had to get a new washer and dryer so we only washed the necessities at the laundromat. Now we are just waiting for them to hook the gas back up on Wednesday morning. Then we will spend a few days doing it all :-)

  10. I love dipping bread in soup! That minestrone looks so yummy. I especially like your addition of the okra. Anytime you can work in okra it’s a plus to me. :)

  12. I am beyond a doubt – a bread dipper!!! Bread is too dry to eat alone, i love sopping up juices and making it a little soggy but full of flavor! Geez your soup looks like the perfect healthy, comfort meal in a single bowl…shells are my favorite kinda pasta. :P hehehe

  20. That soup looks great! I love okra is soups, it always makes me think of gumbo for some reason.

    Dogs are so funny. They don’t understand why the world doesn’t revolve around them and their schedule, so cute!

    Laundry is such a pain! Especially when you’re working out a lot because it’s like 2 or 3 changes of clothes per day. Ugh.
