Guess what I caught on during my lunch break today?

This was the episode where Stephanie got married, but then her “husband” left her to go home and eat meatloaf. Classic.

I had a hard time deciding between oatmeal and eggs this morning for breakfast, so I made a deal with myself.

Whatever I don’t have for breakfast, I’ll have for lunch.

Kale, eggs, and rice are such a great combination.

Today, I used:

  • 1 carrot, peeled and chopped
  • 1 baby zucchini, chopped
  • 2 big handfuls of kale
  • 2 Tbsp salsa
  • 1 cup of so leftover brown jasmine rice
  • 2 eggs

I put about a teaspoon of grapeseed oil in a pan and added the carrot + zucchini. Once those were softened a bit (just a few minutes), I added in the salsa and kale.

After the kale wilted just a bit, I made 2 wells in the kale mixture and cracked the eggs in. Cover the pan and let cook until they’re done to your liking.

I like mine runny – even better with veggies and brown rice under them.

I heated up the leftover rice in the microwave, then put the veggies and eggs on top once the eggs were cooked.

Add some crushed red pepper and salt, and lunch is ready.

This is one of my new favorite ways to eat veggies.

Oh yeah – that dessert I made last night? It turned out good.

  1. ha ha!! i love full house. Me and my sisters use to watch it religiously! I know every episode! it used to come on in the morning at the gym and I didn’t even need headphones, i knew what they were saying! too funny!

    I have no idea what the super secret special dessert is, but with those 2 ingredients, you can’t go wrong.

  28. Mmm your lunch looks like one of my favorite lunches, which is spinach and lentils with a fried egg on top. But using rice is GENIUS, I’m going to have to try that next!
