Better hurry – How I Met Your Mother is on!!! That show totally makes my Mondays  :)

First.

Why did no one tell me how good dates + pb are together?

Seriously – how did I wait this long to try this combination?!?

5 dates + 1 Tbsp peanut butter = Good afternoon snack.

Work was busy today – thank goodness 5 pm showed up pretty quickly today.

As soon as I turned off my computer, I prepped a few things for dinner, changed into my running clothes, and waited for Nick to get home.

We took one of our normal routes today – a little over 3 miles – and it was an okay run.

I feel like I can’t go more than 1 run without having side stitches or cramps. Eh…they can’t all be winners.

One fun thing today – I got some wine in the mail!

I may be the last person to get this, but my Black Box Wine, courtesy of the Foodbuzz Tastemaker Program showed up today! Thanks to Black Box Wines and Foodbuzz!

Our sample was their Sauvignon Blanc, which was perfect to have with our meal tonight.

It was perfectly light + smooth. Nick and I have never really found many white wines that we enjoy, but this was great!

It made me feel a bit fancier in my pajamas tonight.  :)

I had Nick grill the chicken for tonight’s meal while I worked on the veggies.

I marinated some chicken thighs with grapeseed oil, orange juice, thyme, oregano, salt, and garlic powder.

While Nick was grilling the chicken, I put some diced butternut squash and onion in the microwave for 5 minutes to get them going. Then I put them in a baking dish with some olive oil, garlic powder, thyme, salt, and crushed red pepper. I let those cook for about 20-30 minutes.

The broccoli was quickly steamed in the microwave, too.

Easy!

  1. Now I really feel like the last blogger to try dates and peanut butter. Whenever I get some on sale, they go straight in my foodprocessor for homemade Larabars

  5. I know-when i started seeing that dates + pb combo around the blogs I knew that I needed to try it!! let’s just say I quickly became addicted and am having withdrawals at the moment… ;)

  8. Sauvignon blanc is such a wonderful crisp white wine — yum! What a perfect compliment to a lovely meal :) I have never tried a date (*gasp!*) I totally need to add this to my list!

  14. I might be the last person to try that date and PB thing too. I’ve seen it on blogs but never really knew where to get dates to try them. I didn’t want to buy a huge box and not like them. Now that I know that WF has them in the bulk bins I might buy a few to try.

  18. I have heard of the PB & date combo but have yet to try it. It looks so good! What a healthy and delicious looking snack. I loved your dinner as well. I love it when simple meals can come together so quickly and still can taste so good and be healthy for you. The butternut squash looks so yummy! I loved all the spices you added to it. So apropos for fall!

  24. Yum, free wine sounds great! I’m running low on pb but once I restock I’m going to have to try that combo.

  25. The PB and date combo is AMAZING. It’s one of my favorite snacks. Sometimes I add sliced dates to my PB sandwiches too instead of using jelly.
