We made it safe and have been eating well already :) It’s going to be a fun weekend.
Nick and I ate a quick lunch today so we could get on the road as soon as possible.
I brought one of my favorite new wrap combinations:
1 Flatout with some crunchy peanut butter, then topped with carrots, spinach, and fresh strawberries.
I’m telling you – this is good.
I also had the last of our celery, zucchini + red pepper hummus.
I actually brought a yogurt to have for an afternoon snack, but I was super busy today and then we ended up leaving so it’ll wait until next week.
We got on the road, and about 2 hours in, I broke into this.
My first every Pistachio Larabar!
I don’t think it’s my favorite one, but it was good. The perfect 65-mile an hour snack :)
I also had some chocolate milk at our pit stop along the way – I didn’t want to eat any real food since I knew I’d be eating dinner here, but I needed something that would stick with me.
We got here after 5 hours on the road, and had some veggie lasagna my mom made for us!
It had spinach, ricotta, squash, whole wheat noodles, basil….it was good!
And then we headed over to D’lites!
I saw this place when I was home for Christmas and have wanted to go ever since. My mom and dad love this place, so I was happy to be able to try it!
I got some pistachio nut flavor topped with almonds.
I already want to go back tomorrow! 2 of their flavors tomorrow are dark chocolate + coconut, and you’ll be able to swirl them together.
I’m watching a little football with the family and then heading to bed.
I’m going to try to get in my 5 mile run tomorrow morning before we head out on a serious shopping trip – wish me luck!
