I worked.
I ate.
Zucchini, celery, red pepper hummus
I worked some more…non stop…until 5:18, actually. Very busy today and tomorrow won’t be any slower.
I got a super fun package today!!!
Stephanie, over at Cookin Fanatic, sent me this package for our fun blogger swap! She has access to a few things I can’t get here, and vice versa, so we decided to swap a few things to try.
I was so excited when I opened the box!
one of the NEW Larabar flavors!!! which I can’t get here.
Plus, one of my favorites (coconut cream) AND pistachio, which I also can’t find here.
Since we don’t have a Trader Joe’s here, there are a lot of things I see on blogs but have never tried, so I am very excited to try these banana snacks.
Thanks again Steph!!!
And we ran!
The weather was good for running, but not pretty. It was very overcast all day, but never actually rained. We had gray, gloomy conditions, but it was only in the high 60s/low 70s, so the temperature was perfect.
3.5 miles, done. Most of the run was good, but I could feel myself dragging near the end- my legs felt like lead and I just felt worn out.
Home, stretched, showered…
and I ate again.
Leftovers over the Pork + Poblano Pot from last night with some avocado.
Is avocado BAD on anything? I don’t think so.
blurry Roxy says hi!
Oh yeah!
The dessert last night turned out great.
I ended up making Ellie Krieger’s Pear Ginger Crumble Recipe.
This crumble topping mixture is awesome I could just eat a bowl of that. It turned out really well, but I think the pears needed to be a bit more ripe or I should have baked it a bit longer. Some pear pieces weren’t totally tender, but it was tasty! Plus a little vanilla ice cream, because that is just needed on any crumble or crisp or cobbler, right?
I love Ellie Krieger’s recipes! Everything I’ve tried of hers has been good.
I’ve got a busy night ahead:
- fold laundry
- finish packing for weekend!!! :)
- edit some of Nick’s dissertation
- watch football…
- watch The Office!
- pack my lunch for tomorrow
Make sure to get your entry in to win some Chobani if you haven’t already! Put a comment on this post by 7 am tomorrow – I’ll announce the winner with my breakfast post.
Also…make sure your thinking caps are on, as I have an important question to ask in the morning.

The pear crisp looks soooo good! And from freshly picked pears, oh I am sure this was just fantastic. I am so glad you liked the contents of the package :) I can’t wait to get yours!!
ellie is the best! I love her cookbook :)
If they ever recall avocados for some reason, I’m hit, as I eat about one a day in some way, shape or form. And I don’t mean this in a mean way, but I’m glad I’m not the only one without at Trader Joes (or Whole Foods) around.
I feel so left out, and would love to try those banana things! Glad you got the Laras though–PBJ rocks and I love Pistachio. Happy eats!
Avocado is awesome on EVERYTHING! You give me more ideas on how to use it :) The pear-ginger crisp looks amazing. I love Ellie Krieger’s recipes :)
I love those flattened bananas! I make little nut butter rolls with them.
Good job powering through your run in the rain, even if it wasn’t the most pleasant.
Have a great weekend, you busy girl!
Crispy crumbly desserts definitely are best with a little ice cream. Mmmm… I have one of Ellie Krieger’s cookbooks, and I don’t think I’ve really bonded with it yet. I should get it out this weekend. I love her show!
Roasted red pepper hummus is one of my faves!! I loooooove how creamy sabra brand’s is, but i’m sure the cedars is great too! :)
And yum. Avocado makes ANYTHING delicious, in my opinion!!
PS-i’d definitely recommend trying those flattened bananas with some pb/almond butter down the middle!! I’ve seen that combo alllll over the blogs, and have been wanting to try it myself! xooo
Zucchini, celery, red pepper hummus sound great!! as well as the pear crisp :0)
cheers!!
I’m not joking. That cat looks like it could be my cat, Bubba! They look identical.
I love crisps and crumbs! And kudos to you for running, even in the gloomy weather. Those Larabars look good–I’ve always heard such lovely things about them, and can’t find them in S. Texas!
I am so jealous of that PBJ Larabar–can’t find em’ here :-(
Yep, avocado can make any meal better. It’s official. Love adding it to bean dishes!
The dessert looks so good! I need to try some Ellie Krieger recipes.
You gave me the idea – we could swap some eats which are not sold here/there as well;). I could send you salt chocolate, made in a very small chocolate factory here from the salt from our coast – it’s a dark one, as far as I remember the pics. And I might think of something else. What do you think?;)
