Ricotta Makes Me Want A…

Breakfast cookie!

Really, if you haven’t tried making one yet, take this as your challenge to do it! And, if you like ricotta and haven’t tried that on one, do that too. The creamy ricotta makes the perfect “frosting” for the cookies.

For this one, I mixed up the following last night:

Mix it up, then spread it on a plate and pop it in the fridge.

All I had to do this morning was spread on some ricotta and add some berries.

Plus, now that I’ve tried ricotta on them, I just have to make them anytime I have ricotta in the fridge!

And honestly, it’s a good thing I made this last night. I did my “fun alarm trick” where I hit the snooze 3 times and it just quit going off, so I’m running just a bit behind this morning.

Maybe I made this last night because I knew I would be running late? Who knows…but it is good.

  3. I LOVE breakfast cookies! I need to make them more often. I love them with a reallllly ripe banana and PB or AB. SO good!

  4. I LOOOOOOVVVEE breakfast cookies! They are my favorite quick breakfast. I like putting plain chobani or oikos on top! I also love putting dark chocolate chips into the mix! Yum! I want one now!

  5. I have tried so many times! I don’t know what is going wrong, but have always been disasterous… :( Will keep trying. Gah. One day. I might just need to come eat yours ;)

  9. I love to add a whole banana to mine and then top with strawbs. One day I’m a gonna try that ricotta too!

  13. This cooking looks AMAZING! I’ve bookmarked this post and hope to make it over the weekend. I’m not a huge ricotta cheese fan, so I’d probably top it with Peanut Butter and bananas.

  15. Ricotta and strawberries are the perfect combo – I make a balsamic glaze and sweeten the ricotta with a hint of sugar for a sweet/savory dessert – I think it was an Ellie Krieger recipe if I am not mistaken?

  20. i’ve only made the b’fast cookie once, and was disappointed how mushy it was. that said, i did kinda like it. i heard you can put in the freezer to harden it. maybe i’ll try that next time. i’ve never tried it with applesauce!

  22. I’ve never made one because I am bad with making breakfast the night before. I love overnight oats but I just forget to make them. And I’ve bought museli after seeing it here but just don’t remember to make it.
