I’ve got a lot to do and not much time to do it!
This morning, I left early with Nick so I could get a few last things for the weekend, so breakfast was quick + easy.
We had 2 peaches left and HAD to use them today, so we just diced them up and had them with breakfast.
I made a bowl of oatmeal with
- 1/2 cup oats
- 1 cup water
- pinch salt
- 1/2 Tbsp chia seeds from GreensPlus
- cinnamon
- diced peaches
- raspberries
Plus a hard boiled egg on the side
And off we went!
I dropped Nick off at church so he could get started on the sound, and I headed over to Walmart to pick up a few things before church started.
Of course…today was the potluck, and I didn’t remember! I didn’t bring anything to share, but we did end up eating there today. I had a couple good bean salads + 2 small slices of bread – that only held me for so long, though, so I just made this smoothie for a snack.
I put this packet of Amazing Grass in the blender with:
- 1 cup almond milk
- 2 cups spinach
- 1 banana
- 1 Tbsp crunchy pb
Crunchy pb or almond butter is the BEST in smoothies! Every now and then, you get a sip with a little crunch of the peanut or almond :)
I’m working on laundry and cleaning and hoping to get in my run today!

I love peaches just cut up like that. They are super sweet by themselves and then you don’t need a sweetener of any kind.
I hear you on the so much to do so little time. I composed my post last night so taht I would have more time today :-)
Great breakfast! I used to not be such a fan of hard boiled eggs, but they are great snacks!!! Your post reminded me I need to get ingredients for Green Monsters. Have a wonderful night my dear!
