Good morning and Happy Friday!!! Hooray, it’s finally here  :)

Thank you for all your ideas for the peaches + coconut milk! I only had a little left, so I decided to use a little bit in my breakfast this morning.


I’m already missing the early sunrises of summer  :(  The lighting isn’t nearly as good at this time of morning!


I still had just some of the plain oat groats that I cooked up earlier this week, so I heated up the following:

  • 1 cup cooked oatgroats
  • 1/4 banana, sliced
  • 1/2 cup water
  • 2 Tbsp coconut milk

I put that in a bowl and just heated in the microwave for about 1 minute and 30 seconds.

Then I stirred it all up, topped with the rest of my 1/2 of the banana and some chopped almonds.


The coconut milk gave this such a great flavor! And I loved it with the bananas + almonds.

It was a very tropical way to start out my Friday in the cool mountains.


What are you looking forward to today / this weekend?

We probably have tickets to the football game tomorrow, so I am excited about that. Should be fun!

    Today = relaxing but this weekend is all work so I’m not really looking forward to that very much ;)

    alright, you’ve convinced me – i am opening up my can of coconut milk soon and putting it in oatmeal. tropical flavors are one of my faves!

    Today I’m looking forward to doing some yoga. I haven’t done some in weeks and my back is starting to complain. I think I’m going to get out my DVD and do a long session. I’m also looking forward to the farmers market to buy some local treats to send to some friends.

    Enjoy the football game. As much as I love it on TV it is so much more awesome in person. That’s how I got into football to begin with. High school Marching band! And the cool drum line who were patient with me to teach me the rules :-) Love those guys still.

    This weekend on Saturday we are going to the carnival in town and Sunday we are going to the mall to see icarly.
    (icarly = nickelodeon show)
    (me + my 4 year old + 1000 screaming kids)

    I have a twin sister and our best friends are twins, and Sunday is our monthly get together – we met in 3rd grade and have been friends ever since!

    They were the first twins we met :D

    And since I am a football widow on Sunday’s, I don’t feel bad leaving my hubby and step-son behind. And Hannah has to work.

    I had a big banana and some walnuts in my oat bran this morning. That combo always keeps me full for awhile! I should get some oat groats. I’ve been craving all manner of whole grains lately. I should add them to the mix!

    That is a great idea! I have a bunch of coconut milk at home too, been tryign to decide what to do with it. :)
