Good morning and Happy Friday!!! Hooray, it’s finally here :)
Thank you for all your ideas for the peaches + coconut milk! I only had a little left, so I decided to use a little bit in my breakfast this morning.
I’m already missing the early sunrises of summer :( The lighting isn’t nearly as good at this time of morning!
I still had just some of the plain oat groats that I cooked up earlier this week, so I heated up the following:
- 1 cup cooked oatgroats
- 1/4 banana, sliced
- 1/2 cup water
- 2 Tbsp coconut milk
I put that in a bowl and just heated in the microwave for about 1 minute and 30 seconds.
Then I stirred it all up, topped with the rest of my 1/2 of the banana and some chopped almonds.
The coconut milk gave this such a great flavor! And I loved it with the bananas + almonds.
It was a very tropical way to start out my Friday in the cool mountains.
What are you looking forward to today / this weekend?
We probably have tickets to the football game tomorrow, so I am excited about that. Should be fun!
