Muesli Melon

I have been having the strangest dreams lately! Not scary, not bad…just weird. Like people I haven’t seen in years are showing up in them.

I guess I was worn out yesterday! I fell asleep on the couch at like 9:30! I guess I needed some extra rest – or that yoga just put me out after dinner  :)

That muesli I mixed up the other night needed to be eaten today. I wanted it, but I think I’m already not wanting cold breakfasts again – the mornings are a bit cooler, and it’s making me crave big bowls of oatmeal.

But if this is the way to say so long to summer? Sign me up.

The muesli base mix had:

  • 1/2 cup oats
  • 1/2 cup almond milk
  • 1/2 Tbsp chia seeds from GreensPlus
  • 1 Tbsp unsweetened coconut
  • cinnamon
  • pinch of salt

Then this morning, I mixed in about a Tbsp of cooked oat groats, 1-2 Tbsp of plain yogurt,1 Tbsp of chopped pecans and a few raspberries.

I love the combination of the cantaloupe + raspberries.

Fall is definitely my favorite season – it is just beautiful here in the mountains with all the leaves changing and the arrival of cooler weather.

I’m ready for it, but at the same time, I feel like summer never really happened here! It never got very hot, and we didn’t have any type of normal summer vacation or trip to the beach so the cooler mornings are still surprising me.

Plus, I just can’t believe it’s already September!

 

I am ready for pumpkin, apples, hot chocolate, and all the winter squash, though  :)

    I love the combo of canteloupe and raspberries too! And the museli inside looks delish, need to make that combo because I’ve got some chia seeds now!

    I love pumpkin and hot chocolate, too!! My favorite thing about fall is wearing long sleeve t-shirts with blue jeans and my rainbow flip flops :D

    Hi Brandi,

    Can I tell you, this morning I tried your oats in a jar!
    I had an almost empty jar of almond butter, added oats and some blueberries.
    OMG!
    It was like a surprise with every bite.

    I can’t believe its the end of summer either, but honestly i’m ready to bid it a farewell! I didn’t have a vacation really either this summer so it didnt feel like it was the “perfect” summer but it was still wonderful! My fav flavors of fall is cinnamon, and pumpkin def add them into my oats! :) yummm have a good day!

    I’m with you. We didn’t really have a true summer, but I’m ok with that because it was much cooler and we didn’t have any days that were just scorching. I love fall too–mainly for the pumpkin!

    That is one amazing breakfast.

    My favorite fall food is winter squash. I can’t wait until butternut squash and pumpkin make their way back into the grocery store!

    Pumpkin and Oatmeal are my favorites! Even more so…Pumpkin oatmeal with some spices and a bit of brown sugar or maple syrup. I love it! Tastes like pumpkin pie to me. I ate it all last winter and now my friend eats it too.

    I also love being able to drink hot tea again. I have an entire shelf in my pantry devoted to different types of tea and I love just picking several flavors for my multiple cups a day. Replaces coffee most days.

    That bowl of muesli looks DIVINE! Love the raspberries and pecans. Now I’m definitely wishing I stole my parents bag of pecans when I was visiting them.

    I love warmed apples, pumpkin, toasted anything, sweet potato, all the winter squashes like you said. Oo and cinnamon. I’m just thinking about scarf weather now :D

    I’m so very sad to see summer going , I HATE cold weather but I do love anything pumpkin! Oh and chili and hot chocolate make the cooler temps better too!

    Your breakfast looks awesome!

    Fall = Soup! I miss making soup in the summer. I could live on bowls of soup…bean, taco, veggie, chicken, tortilla, etc. Served up with chunks of crusty bread and I’m good to go.

    Omg I’m ready for all of that as well! :) I love summer but fall is such a fun time and I start getting so excited about the holidays! It’s so weird though–I don’t really feel like summer happened here and I live in SD! lol

    My favorite fall flavors are most def apples, hot chocolate, pumpkin, and warm spices floating through the air. I also love it when Starbucks changes their cups to the Christmas ones!!!!
    Great looking muesli! I have yet to master good muesli for the morning.

    I always have weird dreams but I seem to forget them ASAP. I guess that’s why they say you should write them down as soon as you wake up. However, I’m not sure I want to remember them!

    Great looking brekkie – as always! I’m hoping my Chia seeds from GreensPlus come in the mail soon. I can’t wait to try them!

    My favorite fall flavor has to be cinnamon or pumpkin. But I love fall clothing – light layers, light jackets and cotton sweaters. Plus, you can still wear flats/shoes without socks and your feet won’t be cold! I can’t wait for stews and soups!

    I’ve been having the same kind of dreams. Just really random people from my past showing up. Strange.

    B-fast looks great!

    My fave fall foods are b-nut squash and sweet potatoes (tho I eat them all year round). Pumpkin is just okay for me.
