Happy Official Start of Football Season!!!

This is going to be quick  :)

My head is still being kind of weird and loopy – not as bad as earlier this week, but it seems to be taking its time getting out of here. Be gone, weirdness!

I had a green smoothie today for one of my afternoon snacks:

  • 1 cup almond milk
  • 1/2 cup of so water – CLEAN already boiled + cooled water :)
  • 2-3 cups spinach
  • 1/2 banana
  • 1/2 Tbsp pb2

Then I needed a little something else so I opened up this package.

I love these cocoa roast almonds! Just chocolatey enough without being overly sweet. Plus I can’t eat handful after handful since they come in single serving packets  :)

While waiting for Nick to come out to the car, I talked football with my Dad – that was fun. I’ll tell you, that is not something I would have ever been able to have a conversation about 5 years ago. But I love it now.

We came home, changed and went for a 3 mile run per my training schedule. Good run and great pace, but I had some really bad cramps/side stitches today  :(  At least I can still run at a good clip while in pain, right? I felt great afterwards, at least.

After stretching, showering, and putting my pjs on, I concocted the BEST sloppy joe recipe ever.

Super Sloppy Joes – Who Needs Manwich?

  • 1 lb. lean ground beef
  • 1 can crushed tomatoes
  • 2 Tbsp Country Bob’s BBQ Sauce
  • 1 Tbsp yellow mustard
  • onion flakes (or cook a little onion with your ground beef – I was lazy tonight)
  • couple dashes of hot sauce
  • salt
  • pinch of cayenne
  • 1/2 Tbsp smoked paprika

Brown the ground beef, then add in the rest of the ingredients and let simmer until the sauce thickens up a bit.

The Country Bob’s made this sauce! It was my first time trying it; I’ll definitely be using this a lot. Such great flavor!

I guess you can just call me The Lunchlady.

I kind of based this okra on Kath’s Better than Fried Okra recipe, but I made a change:

Instead of dipping in milk/egg, I just took them straight from the cutting board and tossed them in some cornmeal seasoned with salt/blackened seasoning.

Easy! Bake on a foil lined sheet pan at 375 for 20 minutes. These were awesome!

Plus they were fun because it was a mix of green + purple okra from the market.

 

Alright…I gotta go – this game is crazy!

Halftime will be my time to pack my lunch + get my outfit ready for tomorrow  :)

    My best part of today was getting my hair did at the salon an hour ago. I love my stylist and she gives me fierce cuts each time.

  8. If you’re ever in the mood for vegetarian sloppy joes, you gotta try jenna’s recipe (from eatliverun)……..it’s amazing, but i’m sure your version was pretty tasty as well! :)
