Monday, Birthday, Pancakes

Happy Monday! It’s the start of the week when college football begins – you know I’m excited  :)

 

AND today is my sister’s birthday!!!

I get to see you in just a few weeks!

 

Since it’s Monday, my sister’s birthday, and I’m working from home today, I decided we needed some pancakes.

Okay, I need pancakes during the week more often.

I used a whole wheat pancake mix and made enough for Nick and me today, plus a few extras for this week.

And yes, that is an over easy egg on my pancakes  :)

If you like runny eggs and you have never tried this combination, you need to! Pancakes + runny egg + real maple syrup = unbeatable.

These short stack plus some strawberries and coffee make for a great way to start my day.

Off to work!

    Happy birthday to your sister. That’s a tough question…waffles have all those little spots to put things (chocolate chips!) but there’s nothing quite like a plate of pancakes. Enjoy your pancakes today!

    I wish your sister a happy birthday :) What a cool pancake creation, they look delicious! I think I prefer waffles better- I like the crispy texture over the fluffy texture of pancakes. Enjoy your day!

    I don’t think i can choose which i like better. i do love me some pancakes, but i LOVE waffles as well. as kids my mom used to make Belgium waffles and i just remember them being so huge and that was what i liked about it!!!!

    You’re killing me with your runny eggs and I don’t even like eggs that much! I’m a waffle girl but really, if someone made them for me, I’d eat either ;)

    Happy birthday Sister!

    I like pancakes for the simplicity but I love waffles for the nooks and crannies that my toppings can get into. Besides the OCD part of me and divide waffles easier :-)

    I might have to try that egg trick. I’ve gotten eggs with pancakes but never on them :-)

    I only like pankcakes with chocolate chips inside, but haven’t had some for 5 years! I do have a waffle maker too thatI got for a Wedding present, should probably make some yummy breakfast like yours soon!

    I think I like pancakes better, but I don’t have a waffle maker, so it’s a pretty big treat when I get to have them!
