Chia Oats

TGIF! One more week down, one to go  :)  8 days until college football!!!

I was planning on mixing up some muesli last night for breakfast today, but totally forgot. Instead, I just decided to put all the ingredients I was going to use in a bowl of oats!

These chia seeds make the oats so thick and give them such a great texture.

Today my mix was:

  • 1/2 cup oats, 1 cup water, pinch salt
  • 1/2 Tbsp chia seeds
  • cinnamon
  • 1 Tbsp pecan pieces
  • 1/2 peach, chopped
  • handful raspberries

I may need to start putting these chia seeds in every bowl of oats! I really like the texture they gave this bowl.

    I have a sweet and spicy green beans recipe on my blog, it is one of my favorite recipes for green beans.

    We love to grill out green beans. I coat them in a little EVOO with salt, pepper and garlic and throw them into our grill basket. Sometimes I’ll throw some cherry tomatoes in for the last couple of minutes as well. So yummy!

  5. I agree that chia seeds give the oats a great texture. I need to get more to add to my oats.

    My latest green bean creation is grilled beans with garlic salt and a bit of olive oil… Then top them with salsa and parmesan cheese. So yummy!

    Green beans? I love them roasted like fries, with garlic on them…my family think I am nuts though :P I made pesto once using green beans in it which was good- also love them cooked/chilled and tossed in salad :)

  7. GREEN BEAN CASSEROLE!! It’s almost the time of the year for that (extremely unhealthy) delicious dish! Or my family has sauteed them with some olive oil and lemon pepper – delish :)

    So I have chia seeds, but other than sprinkle them in yogurt, I’m not entirely sure what to do with ’em. Perhaps I’ll have to give them a try in oats…thanks for the idea!

  11. if you take raw green beans and put them in a big frying pan with just about enough water to cover then, and then a little bit of butter (i use somewhere under 1 T and we cook a TON when we make them) with salt and pepper and just let them cook (stiring, of course) until the water’s gone it makes AMAZING green beans… something about cooking them that way makes them taste like they’re deliciously drenched in butter even though they’re not…

  14. What a coincidence! I just contacted Diane from Greens+. Allie from LiveLaughEat did a post on the Chia seeds and it got me so interested. I can’t wait to try some of their products.

    I think my favorite way to eat green beans is the way my grandmother used to make them. She would stir fry them with a little oil and black bean sauce with garlic. Simple and delish!

  15. My favorite way to use green beans is as a part of a chilled, summer pasta salad. Boil up some ww pasta (like rotelle or such), adding fresh garden green beans just in time to the pasta water to cook them. Drain, then add pesto (and a bit of extra EVOO if needed) and toasted pine nuts. Good hot, but even better cold topped with a bit of parmesan or romano. Second favorite is the grilled green beans with olive oil and garlic. Yum – I need to get to the farmer’s market!
