Sweet, Salty, Spicy

This cannot be good – I’m watching a replay of the USC/Oregon St game from LAST YEAR!!!!

Ah….I’m going to be so addicted this year, I know it.

Is it bad that I’m excited about that? I love spending all day Saturday watching these teams play their hearts out!

 

I wasn’t sure if we would be running after work or not, so I went ahead and had a bigger bar snack, just in case (and because I was hungry!)

I like this bar – especially all the chocolate chips and pretzel pieces.

 

Work was busy right up until 5 pm and then I booked it out of there! We got stuck in the same traffic we always do – it’s not horrible, but it usually takes us 5-15 minutes of sitting in line, just waiting to get out of the building complex.

Nick ran up to the garden as soon as we got home and brought down MORE tomatoes, so we didn’t go running tonight. We had to cook a huge batch of tomatoes before they went bad!

Nick started on the tomatoes while I started working on dinner.

I took about half of the turkey from the other night and made a Mexican-type soup with it.

Fiesta Turkey Soup

  • 1 pepper, diced (we use an anaheim from the garden)
  • 1 small red onion, diced
  • 1-2 garlic cloves, minced
  • 4 cups broth
  • 1 can tomato sauce
  • 1 can pinto beans
  • 1 can great northern beans
  • 1/2 cup black beans
  • cumin
  • ancho chile powder
  • oregano
  • salt
  • cayenne pepper
  • 1.5 cups leftover roasted turkey
  • squeeze of fresh lime juice
  1. Saute onion, pepper, and garlic in a bit of oil until softened.
  2. Add in broth, tomato sauce, beans and seasonings.
  3. Bring to a boil, turn down to a simmer and add turkey.
  4. Let simmer for 10-15 minutes.
  5. Squeeze in lime juice right before serving.

To serve this, Nick and I both put a dollop of fat free refried  beans on the bottom of our bowls, topped with the soup, and topped that with fresh guacamole + cilantro.

I loved having the creamy refried beans at the bottom of the bowl! Such a fun surprise in every bite.

I also had a few chips to test out my guacamole while I was making it  :)

I’ve got to prep some stuff for breakfast and pack my lunch for tomorrow – let’s hope I can think of something good.

  3. I carpool together with my hubby too! Not only does it save a tone of money, but it’s great one on one time too. About 30 minutes each way and we are lucky we do not have the traffic jam you do. Eeek. That’s just plain annoying when all you want to do is get home.

    My commute is a straight mile shot with barely any traffic :-) It’s a different story once I get there and try to find parking though!

    Commute itsn’t too bad – about 10 minutes on the freeway – 15 minutes from door to desk!

  7. That is one of my favorite bars!! So good.

    My commute is LONG. A little over an hour both ways. I walk to the train, take that train, switch to another train, and then walk to work. It’s getting old… FAST

  8. That soup looks really good!

    Let’s see… when I work at the bakery, I have a 15-20 min walk to the bus and then a 12-15 minute bus ride… (leaving the house at 6:10 AM!)– not very fun.

    When I go to my editing job, I used to walk 15 min… now my boyfriend usually drives me… takes 5-10 min. So nice!

  11. I had a mini of that EXACT bar and I was all excited to eat it… then my cousin’s daughter needed a snack… and i just couldn’t turn down a 2 year old..

    My commute to school is WAY.TOO.LONG. However my commute to work? I could basically throw a stone and hit the building that I work in.

  16. Oh, I love that soup! I love how there are layers of different kinds of beans, guacamole and turkey. So hearty, healthy and delicious!
