Food DOES Taste Good

Happy Friday night!!!

We actually had pretty good weather for most of the day – I’m hoping that will be the same tomorrow since we have some plans that will require being outside. I’m crossing my fingers that it stays clear for most of the day, at least.

So, my lunch was definitely tasty, but it obviously didn’t hold me for very long.

I broke out my snack around 3 this afternoon: plain greek yogurt, local/fresh peach + raspberries, and honey (aka, liquid gold). Isn’t honey awesome on greek yogurt? I was just wishing I had some walnuts to throw on this, but it was still a good snack and got me through the end of the day.

I was so excited to get home – 1. It’s Friday and I didn’t want to be at work anymore (duh) and 2. I knew there was a fun package waiting for me at home!

Thanks Beth! Beth and Food Should Taste Good were kind enough to send me some samples of their chips, and I was so excited to open the box tonight. I finally found the multigrain ones last weekend, and the bag didn’t even last 2 days!

I got 4 different flavors to try and Nick picked the Jalapeno ones to try tonight.

I love the color, don’t you? When isn’t it fun to have red or blue chips? These Jalapeno ones had the perfect amount of spice – just a little kick, but not too much. In fact, I think they would be good with a spicy dip, too, because the chips aren’t too super hot on their own. I’ve had different jalapeno chips before and some of them are so hot on their own that they’re just hard to eat. These definitely aren’t! If you can find them, try ‘em  :)

We had an awesome dinner tonight.

I had a bunch of veggies that I needed to use and a little fresh mozzarella, so we made sandwiches (open face for me).

I made a Cilantro-Parsley Pesto in the food processor with:

  • 1 cup cilantro
  • 1/4 cup parsley
  • 2 garlic cloves
  • 1-2 Tbsp parmesan (I used soy parm, since that’s what I had)
  • 1-2 Tbsp water
  • 1 Tbsp walnuts
  • 1-2 tsp canola oil (I’m out of olive oil!)

So garlicky  :) So garlicky, in fact, that I almost choked while eating dinner because a big chunk of raw garlic snuck up on me while I was swallowing a bite!

I had Nick grill some red/yellow/green pepper, portobello mushroom caps, and thinly sliced chicken.

While he was grilling, I finished baking this loaf of roasted garlic bread in the oven, steamed some broccoli, and got the cheese out.

Since I couldn’t fit everything in my bread like a normal sandwich, I just made 2 open face ones and ate it with a fork + knife.

Garlic bread + cilantro pesto + fresh mozz + peppers, mushrooms + chicken….such a great summer meal! You could do any veggies you want, and this would also be a great vegetarian meal, too.

And, since it’s Friday, I made us a dessert!

Blackberry-Peach Crisp

You can’t have crisp without a little vanilla ice cream  :)

I made this recipe as written, except I cut everything in half to just make 2 servings for us tonight.  I love the combo of the peach + blackberries, and the brown sugar in the topping just makes it.

Plus this was so easy to make! Cut fruit, mix up the topping, bake, eat.

I’ve got to get working on my grocery list! Nite!

  2. I’ve NEVER tried that brand of chips before….I really really want to try them, I’ve been hearing rad reviews about them!
    Oh and that Cilantro-Parsley Pesto sounds lovely with the walnuts! Brilliant color, too! you know I love my greens :-)
    Fav way to use honey: as lip balm, smeared on my lips! It’s great for lip-chapping protection!

  5. I’m not a fan of those chips, but I never had the jalapeno ones. Are they *really* worth trying? I’m unsure.

  6. I see those chips all around and I still have yet to try them! The jalapeño version looks and sounds so good – I’m always down for a little spice in life :)

    Love your summer meal and love your berry dessert with ice cream even more! Summer is pretty delicious, I must say. I hope you have a fun weekend ahead of you!

    I actually don’t like honey! But, occasionally I will bake with it.

  12. i love crisps. so easy. and you can vary them so much. add pecans, lemon zest, coconut, whatever you want!

  13. Blue chips..I’d love to try them but they are not sold here. Imagine Lays was introduced into our shops some months ago (I don’t eat chips but I know that), hehe. But I like tortilla chips, if only they were less greasy and salty..
