Cookie for Breakfast

Even though I have to write myself notes to remember to make these, I’m always happy that I do.

It has been too long since I’ve had a breakfast cookie, and this one reminded me why I love them so much.

Last night, I mixed the base of the cookie:

  • 1/2 cup oats
  • 2 spoonfuls unsweetened applesauce
  • 1 Tbsp cinnamon raisin pb
  • 1 Tbsp chocolate shaklee meal shake powder (like a vitamin shake mix, not a protein shake)

Mix all of that in a bowl until it’s combined, spread it on a plate, and let it sit and wait for you in the fridge until you’re ready to eat  :)

Then this morning, I added on a layer of ricotta, some market peaches + raspberries.

I have a feeling this may start a cookie obsession for a while – these may replace my pancake creations! At least until I get more egg whites, anyway.

Mine is definitely cold breakfasts (bfast cookies, muesli, smoothies, etc) AND this awesome fruit from our farmer’s market. So good!

  1. Maybe it’s the recent hot weather, but lately I just can’t get enough of the following salad combo–romaine, spinach, summer squash, red pepper, broccoli, raw corn, avocado, shrooms, sprouts and plain Greek yogurt mixed all in.

    It’s so colorful, cool and delicious and it uses so much seasonal produce (that I know I miss in the coming months) that I feel justified in eating it at some point every day :)

  5. Lately mine has been the overnight oats. I always ate hot oatmeal, even in the summer. But I gave it a try after buying some almond milk and love it!! The only reason I didn’t have some this morning is because I ran out of yogurt.

    I’m going to have to try this cookie recipe too. See this is why I love food blogs…people give me so many ideas :-)

    I’m obsessed with pretty much all fruit right now… which is better than a few weeks ago when i ONLY wanted watermelon-when I was doing that I ate a 10 lb one in something like two days!

  12. Made an egg over easy this morning using your method and topped my oatbran with it! First time for savory oats of any kind and I really loved it.

    Current food obsession is nut butter. :)

    my food obsession is prolly blackberry preserves/blackberries/anything flavoured blackberry. YUM.

  18. This looks great… sounds and looks like the perfect breakfast… a nice, cool substitute for oatmeal.

    I go on tomato and corn on the cob binges every summer. The good, ripe ones have been slow to come this year, but I think they’re finally here. Heading to a farmers’ market this weekend… I hope!

  22. OUTRAGEOUS! I am hooked – I have made for the past 5 days straight. I made one for my mom and took to her at her hair salon and a few people tried it and they all wanted the recipe – they all thought it was a dessert. I am obsessed with clean eating and this is a winner. Great job! Thanks a million!
