Liquid ‘til Lunch

Who me?

Never would I have thought that I could make until lunch on just liquids.

Enter Amazing Grass, and I definitely can! Now, I didn’t set out to do this – I even had a few ideas in mind in case I wanted a snack before lunch. I just didn’t need one!

Even though I posted a tutorial on eggs this morning, I didn’t have those today.

I started my day trying this Pomegranate Mango Infusion Amazing Meal – this is one of the samples I bought last week from Amazing Grass, and I have to admit, I was a little apprehensive about trying this flavor.

Luckily, I added some awesome things and it turned out great!

This smoothie had:

  • 1 packet Amazing Meal Pom – Mango
  • 4-5 ice cubes
  • 1/2 cup almond milk
  • 1/4 cup pure oj
  • 1 Tbsp shredded unsweetened coconut

Yum! I loved this one so much – I think I actually like this one better than the chocolate, but that might have to do with my add-ins. I loved the chewy little bits of coconut in the smoothie, and the little bit of orange juice perked it up just enough.

I had this smoothie around 7:30 – 8 this morning, then had 1-2 cups of coffee and some water and I was fine until lunch! I’m just really surprised since 1. I normally don’t just have smoothies for breakfast, and 2. my breakfasts are usually more calories than this smoothie was today. It was tasty, though! And I’ve been busy with work this morning, so that may have had something to do with it.

Work, work, work…finally lunch! I could not decide what I wanted, but I knew I didn’t want to use my leftovers today since I was home and COULD make something. That way, I’ll have leftovers for tomorrow in the office.

I decided to make my version of VeggieGirl’s BSCubed dish! I didn’t do mine exactly like hers, and I swapped/added some ingredients, but man what a good idea!

  • layer of spinach
  • black beans
  • roasted potatoes from market with salt, garlic, smoked paprika
  • our fresh made salsa
  • our homemade guac

I thought I had some sweet potatoes, but I didn’t so I just used some potatoes I got at the market this weekend – perfect! Roasted potatoes are so good, especially with a little smoked paprika.

This is also the end of the salsa / guac – finally! Both very good, but they were lasting forever! We should have another big batch of ripe tomatoes later this week, so I’m sure we’ll have some more  :)

 

Alright – back to work for me!

    My fav way of eating potatoes is either baked and topped with broccoli and cheddar cheese, or slices of baked potato drizzled with EVOO, salt, and pepper. Delish!!

  3. Oh what a yummy lunch!! That looks tasty! My favorite ways to eat the spuds: SP fries (cheetahs!) or baked with a slice of pepper jack melted on top :)

  8. What a delicious lunch! When I lived in Sweden, they ate boiled potatoes- completely plain with a pinch of salt, and I have learned to love them.

    Amazing Grass is exactly that- amazing!

    I find Amazing Grass keeps my appetite at bay, too, however I still have a solid breakfast a couple hours afterward.

    I definitely love roasted potatoes, but I’m also a big sucker for mashed potatoes. I hardly ever have either though, not sure why.
