Dip Into Fun

Dang this rain!

Today was beautiful all day while I was working. As soon as it hit 5:00, it started raining here! And it’s been raining ever since. I think it is just trying to keep me from running. I don’t mind if it starts raining while I’m OUT there, but I’m not going to start if it’s already pouring. I hate when my shoes get all soggy and gross; plus, that’s when I get blisters, and I do not want any part of that, thank you.

At least dinner turned out well!

I felt like crazy cooking girl in the kitchen tonight – I was working on like 5 different things at once!

I made 2 dips to have with dinner and with snacks, etc, this week. I took the Roasted Eggplant Salad and Yogurt Sauce recipe from SELF Dishes and worked on that first.

I basically followed the recipe, except for the following:

  • I roasted some green, yellow, and red pepper along with the eggplant PLUS I roasted some local squash to have with dinner
  • I used just a few small tomatoes from our garden
  • I added garlic to the yogurt sauce
  • I just cut up a ww pita and toasted it without the spices, etc.

For the main part of dinner, I took these cute little squash from the market –

aren’t they awesome? I’ve never seen any that were 2 colors like this.

I roasted them in the oven along with the eggplant + peppers, just sliced with some garlic, salt, and pepper.

Along with the squash, I cooked some whole wheat couscous in water with some garlic, onion, parsley, and salt. So quick and easy! I love couscous – it barely takes any time at all.

I also cooked some tilapia with garlic, salt, pepper, and oregano. The main part of dinner barely took any time at all  – roasting the veggies for the salad took the longest, but even that didn’t take more than 30 minutes.

This meal had a great combination of flavors, and I can’t wait to have more the salad/dip! Mixes like that just get better after sitting overnight.

All that’s left for me tonight is to finish packing my lunch and snacks for tomorrow!

  2. WHAT?! Those zucchini are crazy – love it! My favorite dip is old school sour cream & onion chip dip. Ugh, I could eat an entire container all by myself. Delish!

  3. Guacamole or I like to mix tomato sauce with hummus for a dip.

  7. I can’t stand getting my feet and shoes wet. Blah! Yogurt dips are a HUGE part of an Indian meal, I can’t eat anything without it. Have you tried it with rice?

  10. I had a sample plate of dips at the Greek restaurant I ate at last night. Twas amazing! I think it’s funny that it was scorching hot and sunny all day here and raining near you! Silly weather!

  11. my mom’s friend makes the most amazing guac. she does it for parties, and brings all the stuff and makes it RIGHT before serving. It’s got chunks of tomatoes and onion, and it’s just soooo fresh. I’m debating if it’s tacky to serve guac at my wedding next year because it’s just that good!

  12. That dip looks amazing! I love eggplant, I must try it. Those zucchini’s are so cute! My favorite dip would either be hummus or guac. Ok, eggplant is on the list for my next shopping trip :)

  13. This squash looks so similar to zucchini – what’s actually the difference?
    I have no favourite dip, the last one I made was a kind of humus which didn’t turn out well. Once I combined camembert with cheese spread and yoghurt and it was funny, actually tasty.

    My faves are hummus (sabra rrp) and spinach artichoke!
