Happy Monday morning!

First, regarding the lentil cake recipe – it’s in the Clean Eating magazine with the ice cream cookie sandwiches on the cover. Other than that, I don’t think I can post it online, can I? I’m not sure of all the copyright laws, etc. I know they have some recipes on their website, but I’m not sure if that one is up.

I know I’m having a redo of a breakfast I had last week, but I just wanted it so bad this morning!

Yup, I had cannoli-cakes again, with all the same toppings!

The amount was a bit different since I only had 1/3 cup of egg whites left, but it was still perfect.

  • 1/3 cup oats
  • 1/3 cup egg whites
  • pinch salt
  • cinnamon
  • vanilla
  • 1/2 tsp or so baking powder

Cook in the pan then top with ricotta, peach, raspberries and a drizzle of local honey. Yum, yum, yum.

With all this ricotta, you would think I was Italian!

But I’m not.

I know that I’m American Indian, French Canadian (I think) and North Carolinian  :)

Coffee is brewing and I’m working!

  6. I had ricotta cheese on mine too today! With strawberries, banana, blueberries & raspberries. Mmmmm :)

    I’m 50% Sloveian and the rest is English, French & Welsh. I like to call myself a Euro-mut.

  8. I’m Polish, and my huge family has no idea where I came from (being a healthy vegetarian). With them, it’s kielbasa, kapusta and other meats all the way.

    At first they were just really confused that I actually didn’t want meat on purpose, but when I told them it just meant more for them, they got over it.

    Plus, I do traditional Polish desserts like no one else’s business…

  12. I am German and French. I find it interesting that many in the current generation don’t know or care what their background is. The good old US is truely a melting pot!

    My heritage is kind of unknown, my parents have always been really vague about it, but my last name is Beck (so I’m guessing some German?) my mom’s maiden name was McCreary (perhaps Irish?) and we definitely have a tad Native American judging from appearance and the fact that we live in Oklahoma.

    I get asked all the time if I’m different things though, like Spanish, Greek, Indian, Italian… it’s funny and I like to make up that I am some random ethnicity sometimes just for kicks. People always believe me!

  15. Isn’t clean eating magazine the best? I adore it…pretty much everything I’ve made out of there has been delicious. And, as always, your breakfast looks mouth-watering….jealous (because it was definitely probably better than my burnt toast!)

    People ask if I’m Indian, Middle Eastern, Hispanic, Native American, Hawaiian, Filipino, etc. You name it, I’ve probably heard it! :)
