Freaky Friday

I’m so happy it’s Friday!!! It doesn’t feel like it to me, but I am wearing jeans and I had a fun breakfast + awesome Honduran coffee so that’s a good way to start the day.

It seems I decided to have veggies for breakfast and fruit with lunch, which is the opposite of what I normally do.

But it was good!

I made a stacked bowl for breakfast this morning and it was super tasty.

  • grits
  • bean/corn/pepper/onion salad mixed with some of our fresh cooked tomatoes = instant salsa
  • 2 eggs that I cooked too long  :(
  • fresh Miami avocado!

The only bad thing? I totally overcooked my eggs and they weren’t runny at all! It was still a good combination, though.

Lunch had to be easy and quick today. I had a follow-up eye appointment, so I ate this lunch in stages.

This morning, I put together a strawberry + almond butter sandwich on some alvarado st. bakery bread.

Some all natural pear crisps – they’re like air! So light and good.

and some broccoli I had at work from earlier this week.

I have a feeling some snacks will be happening this afternoon…my stomach is not satisfied.

  1. Exactly how do you typically cook your eggs? I’ve been making your savory oat bran from time to time by frying the eggs with spray oil in a non stick pan, but more than half the time I break the yolks when I flip them and then I don’t get that oeyyyy goeyyyy goodness soaking down in to my oat bran like you are talking about!!

    My weekend plans consist of learning how to cook “over easy” eggs without breaking the yolks :-). Have a good one!

    My mom and sister are visiting tonight, so I’m looking forward to that. Then after I get out of work tomorrow, I’m hoping to go see Julie & Julia. Yay!

  9. OOOO I’ve never thought of strawberries and almond butter. Guess it’s not too different from strawberry jam and almond butter.

    This weekend I have to preach and run services and then head to CT to attend a wedding that night. It will be fun to see friends and enjoy some time with the bride and groom before they move to GA.

  10. Hi Brandi, I’m curious – what kind of grits do you use? They look SO good in your pics and to be honest with you, I think the last time I had grits was when I was 8 years old. I can’t wait to try them again and you’re my inspiration. Hot grits with runny eggs – sounds like a home run to me!

    • Hi Nicole! I just use instant plain grits in the container (not the instant packets). I also usually make them in the microwave – 3 Tbsp grits, pinch salt, 3/4 -1 cup water. Easy!

      Let me know if you have them again! They cant’ be beat with runny eggs :)
