Pancakes Make It Okay

Well, I don’t know what happened this morning but I could not get out of bed! I guess I turned my alarm off, so I was rushing around this morning just trying to get these made.

I’ve been waiting to make these again. And even though the contest is over, it was still fun deciding on my toppings AND eating them.

Today’s short stack had:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • cinnamon
  • Honduran vanilla
  • 1/2 tsp baking powder

Topped with 1 Tbsp cinnamon raisin pb and some farmer’s market peach.

I almost mixed up a muesli or breakfast cookie last night for this morning, and I guess I should have since I didn’t get up on time.

The good thing about these pancakes is that they don’t take long to make or cook….or eat :)   So I was still fine, just a little rushed.

What’s your favorite fruit/nut butter combination?

I’m not sure if I can pick a fav. PB and almond butter are great on just about every fruit!

Yum! I had pancakes last night and they were amazing per usual. My fave combination is pb with apricot preserves, but any combo is great!

LOL! You are so cute. And don’t worry; you’re not the only one who still has pancakes on the brain. Even now, my link to your cinnamon-roll pancakes gets like ten hits per day :) . And now that I’ve found non-dairy kefir, I’m going to have to make them too… icing and all :)

YUM – love pancakes. I’m boring with my favorite nut butter/fruit combo….peanut butter (or almond butter) and banana. Can’t beat it!

i wanna try those pancakes! do you jus tmix it?no blender required?

Fav combo is a toss up between banana and pb and peach/nectarine with pb. yum yjum

Yup, I just mix everything in a bowl and then spoon it into the hot pan!
