Back At It

Good morning!

You know, I enjoyed my eggs yesterday for breakfast, but I sure did miss my pancakes  :)

What’s on the menu today?

This morning, my pancakes included:

  • 1/2 cup oats
  • 1/2 cup egg whites
  • pinch salt
  • pinch cinnamon
  • baking powder – hey, I remembered!

Then I topped them with 1 Tbsp crunchy pb and 1 tsp fig jam.

Yum. I love when peanut butter gets all melty.

Pancakes, fruit on the side and a cup of milk is quickly becoming my favorite breakfast  :)

Only a few more days in the pancake challenge!!!

  1. Mmm those pancakes sound wonderful! I’ve got to make a batch some evening so I can have them in the morning. I just never get up early enough to get my morning exercises AND cooking in before heading to work.

    My favorite jam is the Lavender jam I found at Whole Foods. I had PB and Lavender sandwiches for two weeks straight and never got tired of it. It was such a refreshing, different taste!

  2. I’m obsessed with this raspberry pomegranate jam that I won in a giveaway from Crofter’s Organics. Its SO AMAZING!

    My favorite is probably homemade strawberry jam. When I was in high school, one of my friends family had a house at Emerald Isle in NC and I used to go with them during the summer. Her mom would make us “peely” biscuits with homemade strawberry jam and still today, that is one of my favorite things to eat.

    My favorite jelly right now is guava jelly, but grape jelly or strawberry preserves are always great options.

  9. Man, I wish I could come over for breakfast when you make pancakes ha! My fav kind of jam is probably homemade rhubard jam! =)

  10. I’m a big fan of anything PB&J (except that Clif Dip’d bar – so not PB&J!)!

    I like strawberry preserves :)

  11. Swoooning over your pancakes again! I actually got out my buckwheat pancake mix this morning, contemplated it – and put it back because I didn’t have a lot of time this AM. I can’t wait for the weekend because I’m using your recipe!

  13. Okay – your baking powder incident reminded me of a time I was making pancakes.

    I couldn’t remember for the life of me if I had already added salt or not. So, I added some anyway.

    Well, turns out the salt had already been added. They tasted like salt water pancakes or something. They were sooo bad.

    Ahh.. too funy.

  24. Hey! Those pancakes look delicious, I make the exact same thing for breakfast in the morning but usually add half a banana into my mix :D I was wondering how long this fills you up for, I only use 1/3 cup oatmeal mixed with some flaxseed and I stay full for a good 4-5 hours!
    Great pictures, making me hungry :P

    • They keep me full for 3-5 hours, too! Depending on the toppings/what else I add. I love ’em :)
