Sundays always just speed by – I can’t believe it’s already 9 pm!
I’ve got one load of laundry to finish, and Nick is helping me with cleaning as I type, so everything should be done in about 15 minutes!
As for dinner, I knew I had to make this as soon as I saw it.
What a great presentation!
I basically followed the recipe, but did add/change a few minor things:
- I used 8 oz. of lean ground beef
- I ended up having to cook an entire pound of whole wheat pasta in order to fill up the pan.
- I added oregano, crushed red pepper flakes and a mixed italian seasoning to the sauce
- I also use soy parmesan since that’s what I had, and 2% mozzarella
The only problem?
Mine came out of the pan fine, sliced fine….but once I went to move the slices? The pasta pie fell apart – oops!
It still tasted delicious.
It just looked more like an island of cheese in a sea of pasta, rather than a slice of pie :)
I loved the recipe, though! And after seeing Roni’s pictures of it, I know it’s possible to get them in out still looking like slices of pie – I’ll have to work at that part!
Alright, I’m off to enjoy what’s left of the weekend!
Oh, and no cookies tonight :( I’ll have to see how the weather is tomorrow – they will be made at some point this week!

Brandi, that looks delicious! I made something similar, from Heather’s site, I believe but it had eggs in it to hold it together when you slice it. But, as long as it tastes good, that is all that matters!
