He Raced, We Ate…

Weekend conquered!

Okay, get ready for a serious recap. This weekend was just jam packed with fun.

First – Nick did great! He said he would have done better if he had an actual road bike since they’re lighter than mountain bikes, but he did awesome!

After he finished the race and we heard the results, we headed back home to a lunch waiting for us at the house. That was probably the best idea, because we ended up not getting back to the house until around 2 pm Saturday afternoon!

I put a pork loin in the crockpot Saturday morning and let it cook until we got back. I just made a quick sauce with

  • tomato sauce
  • smoked paprika
  • ancho chile powder
  • bbq seasoning mix
  • salt
  • pepper
  • garlic powder
  • cayenne
  • crushed red pepper
  • 1 cup diet cherry pepsi

All I had to do when we got back was shred the pork and load it on some whole wheat buns.

I also made a BLT (minus the L) pasta salad with a little bit of cooked bacon, tomato and whole wheat shells tossed in a mix of olive oil mayo, yogurt, dijon, vinegar, salt, and pepper. We also had some corn that Nick’s sister and her husband brought from Maryland. This corn was some of the best I’ve ever had – it was super sweet.

We all ate lunch, Nick took a shower, and then we all took naps  :)  We had been running around all morning making sure he had what he needed at each transition, and he was worn out, so we all slept for about 30 minutes or so.

Nick’s dad, his sister, and I went for a 3 mile run that afternoon, then came back and got ready for dinner.

We took them to eat at The Palisades, which actually put on the race and is one of our favorite local places.

We had the usual crostini + hummus + tomato jam.

Nick and I split a house salad to start –

And we ordered a few pizzas to share: a Buffalo Chicken, Spanish, and a Pepperoni. Nick’s Dad got their chili lime chicken, which was really good, too.

This times a couple? I don’t even know  :)  Nick and I also split an apple crisp, but I didn’t get a picture of that one.

Then we came home, sprawled out on the couch and watched Defiance. I still loved it – if you haven’t seen it, please do! It is a sad movie since it is based on a true story and set during WWII, but it is such a good movie and well done. Nick and I really enjoyed it in the theatre, and we liked it just as much again last night.

This morning, we hung around and ate breakfast until church. Nick’s dad made biscuits! He is the biscuit master – he does not measure ANYTHING. He just dumps the stuff in a bowl and they always turn out amazing.

I had one of his biscuits – 1 half had some honey butter and the other half had that fig jam. Yum.

I also had one slice of bacon, some grapes/berries, and some cherries + coffee.

I was so excited for lunch today.

Nick’s sister and her husband brought a pound of lump crabmeat with them from Maryland, so we had Nick’s mom put together their crabcake recipe. The best thing about this recipe? It barely has anything in it – just enough to hold the crabcakes together, but all you really taste is the crab.

And this crab was perfect.

I had 1.5 crabcakes, a half ear of corn, some salad, a slice of roasted garlic bread and a little dish of watermelon.

I was so sad when the crabcakes were gone! They were so, so good.

Then all the family got back on the road to head home. Nick and I started some laundry and took naps while listening to the rain. It was nice to unwind a little bit on this gloomy day.

Although we have tons of leftovers in the fridge, we’re using those for some lunches this week so went to our new Mexican place for a quick dinner tonight.

I wasn’t super hungry at dinner tonight, so I ordered a guacamole salad + mushroom quesadilla.

Quick and easy.

I have my lunch packed and one more load of laundry to fold – then there’s more cuddling scheduled with Nick + Roxy. She is happy that everyone is gone because she is not a fan of dogs being in “her” house  :) She’s cuddled up beside me right now, catching up on all the cuddling she missed out on this weekend!

All in all – I give this weekend a big thumbs up!
