Pretty Pasta

I had so much good food today! Loved breakfast, lunch was great, and that theme continued on throughout the day, which always makes me happy.

Work was super busy again today – I think tomorrow may be a bit slower, but we’ll see. Knowing me, it will be crazy just because it’s the last work day of the week!

I packed a snack today that I haven’t had in a while –

1 Tbsp crunchy pb + 1 tsp fig jam on an Arnold Thin. Maybe the perfect snack? I love this fig jam and need to find 100 more things to use it on.

This was just enough to fuel me through a hectic last hour of work (which also included playing with a coworker’s friend’s new baby!) and an appointment with the chiropractor.

Nick had plans to go out on the river tonight since I had my chiropractor appointment, so I got that done and then came home to do a 20 minute Power Yoga download and my SGBC Day#1 stuff!

What a great 30 minute workout! I was sweatin’ at the end of both of these. It was also my first time ever doing the “mountain climber” move and it was crazy! My heart was pumping so much at the end of each set – I’m glad I”m doing this boot camp. I’m excited to see what changes will happen in the next month!

Dinner tonight was a tried and true meal that we both love, and I’ve made it many times.

I use the modified version (here) of this Giada recipe for Turkey Meatballs and Penne. We love this recipe so much that I’ve never actually tried making the meatballs with beef – the turkey is wonderful in this recipe.

I just made a quick sauce with

  • 1 28 oz. can of crushed tomatoes
  • garlic powder
  • onion flakes
  • crushed red pepper
  • italian seasoning
  • parsley
  • oregano
  • salt
  • pepper

I let the sauce simmer and baked the meatballs for 25 minutes at 350 (instead of pan searing them) while the pasta cooked.

Quick steam some broccoli in the microwave and you get a nice little steambath when you take that out and uncover the dish, right?

Free facial, even if it smells like broccoli. I take what I can get.

This post would have been done earlier, but Nick and I just got back from playing with our neighbor’s new puppies  :) They are so cute! We also got to see the 7 little chicks he has flying around. Baby animals just make me happy – they’re so awkward and funny and way too cute for their own good.

In fashion news (?), I don’t know what has been up with me lately, but I wore a skirt or dress every day last week except Friday and it’s happening again! Maybe it’s the weather, maybe I just feel like actually looking like a girl at work  :)  Who knows, but I am loving finding all my dresses again. I honestly forgot I had this one!

I found this dress at JCPenney (swanky, I know) for like $12 a few summers ago and fell in love with it. I love the belt, but my favorite part is how the shoulders cut in. I also feel a little like a Stepford Wife, but I’m okay with that.

Love it. I think I need to invest in more skirts and dresses! I just get in the mood to wear them once the weather is nicer – it’s really hard for me dress up like this in the winter because I’m always so cold, so I am embracing this while I can  :)

Good thing I just got 2 new dresses for my birthday! Now what am I wearing tomorrow…
