Following in Polly’s footsteps, this post is going to be my thankful post for today.
I am thankful…
for a fun birthday celebration breakfast with coworkers.
that our VP decided we need to have these, not only to celebrate birthdays, but to get to know each other better, as our offices are spread out all over the place.
for the awesome omelet station this morning :) I had a mushroom, pepper, onion, tomato, ham and cheese omelet, a slice of wheat toast with a little honey, and tons of fresh pineapple and cantaloupe.
for coffee. A little too much today! I was jittery – I think their coffee was super strong because I didn’t have very much.
for my husband, who was my lunch date today. We went to Sal’s today for lunch (which was our original plan for carbo-loading before our race, but that didn’t happen). We shared this humongous Greek salad –
This was one of my servings; I had 2, Nick had 2, and we had at least a cup of this left that will be part of my lunch tomorrow :)
We also ordered a pizza to share – The Rustica. This pizza is amazing. The dough is definitely the best part – so light and crisp and you can actually taste the dough! This one has pepperoni, roasted red peppers, fresh basil, and black olives. Such a good combination. Try it if you haven’t!
I had 2 servings of salad plus 1.5 slices of the pizza. Breakfast was later for me today than normal, so I wasn’t super hungry at lunch when we were there. But this was enough to get me through the entire afternoon! I’m surprised I didn’t need a snack today.
I am thankful…
for good food and good company.
for the hour long yoga download I did once I got home. My arms, legs, and abs are burning, but I loved every.single.minute.
for speedy leftovers on weeknights.
Nick’s road tires for his bike shower up today, so our run got postponed again :) Oh well! Now that I’ve downloaded so many yoga podcasts/mp3s, I’ve been waiting to do a longer one and it worked out perfectly. He put his new tires on and took the bike for a ride, while I did my yoga to the people 60 minute flow podcast. I loved the music – it made it go by way too fast.
We had some leftover chicken casserole from last night, which actually gets better after sitting in the fridge!
A servings of that, corn, and broccoli and cauliflower made for a quick and easy dinner.
I am thankful for….
good books and new magazines.
