Cool + Comforting

I guess the rain stopped for a little while, but it’s still pretty gloomy today.  Apparently, we’re in a flood watch for tonight – let’s hope we don’t get anymore! We’re getting the opposite extreme of last year – we had such a dry year last year and were in drought until the last couple of months. It’s crazy that it’s gone from being super dry to being in a flood watch!

I wasn’t sure what the plans were after work exercise-wise, so I packed a snack to have either way.

I had another one of my muffins + Oikos plain yogurt. Good again! I’m finishing up the recipe write-up, so it should be up soon.

Even though it wasn’t raining when we actually got home, we didn’t go running today.

Nick’s grandmother passed away the other night so he and his sister are trying to figure out if they can make it there for the funeral in time. Nick’s been on the phone with family all night, so I just got to making a comforting meal for dinner.

I made my mom’s chicken casserole tonight – it had been way too long since the last time we had it!

This is one of my favorite things that my mom makes. It’s just so good and I have so many good memories attached to this meal and my family. Nicks loves it, too, so that makes it easy  :)

  • 1 lb chicken breast (I used 1.3 lbs since that’s what my pack had)
  • 1 can low fat cream of mushroom soup
  • 1 can low fat cream of chicken soup
  • 1 can-full skim milk
  • 1/2 bag Herb seasoned stuffing or regular box dry stuffing mix
  1. Poach the chicken until cooked, then shred. You can also use pre-cooked chicken if you have it, rotisserie chicken, etc.
  2. Mix the shredded chicken with soups and milk.
  3. Pour into 9×13 baking dish.
  4. Top with stuffing mix.
  5. Bake at 350 for 30 minutes or until bubbly on the edges.

I got the chicken cooked and the casserole in the oven, then I went downstairs to do some yoga! Yay for yoga 2 days in a row! But holy chatarunga! I didn’t think I was sore at all until I had a bunch of those to do tonight after the ones last night. My arms were like jelly when I was done, but it was good.

Tonight I did the 20 minute yogadownload.com Power Yoga #1. I really like the two power yoga ones I’ve done so far. They really get me working in only 20 minutes! Still, my favorite part is how I feel once I’m done. I just feel quiet and still and peaceful.

As soon as I was done, I came upstairs and finished putting dinner together.

I had a serving of the chicken casserole along with some corn, and some green beans that I mixed with the leftover pea/mushroom sauce we had on our ravioli the other night.

What better way to end a comfort meal than with a sweet treat?

I had to run up and pick something up from the store, so Nick came with me and we somehow ended up at Dairy Queen.

This is my favorite thing from there  – I get a dipped dish instead of a cone because the chocolate forms this thick ring in the top of the dish and I save that for last. Mmmm….I’m sad it’s gone.

 

I think I’m ready for pajamas and some Food Network.

  1. Favorite family meals…Hard to say, because my parents love Korean food and I don’t…but I guess we ALL adore kimchi…we eat it with everything and anything! Is kimchi a meal? lol.

  2. hm, one of my favorite family meals is my mother’s chicken and dumpling soup. i also love her quiches. and her cheesy grits. and pretty much all of her food :)

    your casserole looks wonderful and i LOVE the hard chocolate ring that’s left when you get the dip in a cup like that. yummy!

  3. The chicken casserole sounds excellent. I love casserole dishes like that! They always make me think of holidays and family get togethers.

    Dipped DQ DISH? Hm I never thought of that. But now I think I need to make a DQ trip haha.

    And the chicken casserole looks fantastic too! My favourite family foods are usually the traditional Polish meals my mum sometimes makes – like pierogi!

    My favorite family meal is the basil, fresh mozzarella and tomato sandwiches we make. It always reminds me of the perfect summer day :D
